The Case For North Carolina As The Barbecue Capital Of The World

  • This week’s pick from Southern Foodways Alliance’s documentary program profiles Skylight Inn BBQ, once named the “capital of barbecue” in America by National Geographic. The all-wood, whole-pig production at Skylight Inn has been family-run for three generations, and it’s renown (for quality, flavor, and values) extends far beyond the city limits of Ayden, North Carolina.

Coming from a brisket-loving Texan here -- that looks GOOD! Especially the way its served with cornbread & slaw. I'd definitely ask for skin in it. I'm drooling 🤤 Great job!

I’m from eastern NC and it wasn’t until I traveled to other states that I realized people refer to barbecue as anything cooked on a grill. Where I’m from, barbecue is ONLY chopped and seasoned pork (or turkey). If something is cooked on a grill, we don’t call it barbecue..it’s grilled (whatever it is).

Let me try and put this argument of best BBQ to rest. Simply there is no best. I've had great BBQ from many restaurants with people who own the restaurant and do competition. Most are good few stand out. Now on the other side I've had great BBQ from people who don't own a restaurant or do competition. Yet are better. You can't put a label on the best because there is always someone who does it better and they don't put that out there. I like to think the best is always around the corner. No matter where or who! You'll always be surprised if you keep looking.

First time my company in NC did a "pig picking" after work in the back parking lot, the caterer opened this big black metal smoker they had towed in, and the guy puts on rubber gloves, opens the smoker and sticks his hands into this whole pig lying there on the grating and just rips out pieces of it with his bare hands and throws it onto paper plates. It wasn't a very appealing scene to me.

That's not diverse enough to be considered the "best bbq". Plus...pork butt alone is super easy to make! Whole hog is a different story though. Nonetheless, I enjoy all types of bbq 😀

You use Wikipedia for your education.... lol, the most bias written shit on earth. Stupid American Ignorance strikes again, I put it in capitals because yes, it's a thing. What do you think cavemen did to cook food? turn the oven on and chuck it in on gas mark 7? twat!

    • @bigjah917
      @bigjah917 7 ปีที่แล้ว

      1. Wikipedia is a global encyclopedia, edited by volunteers, not only Americans
      2. Cavemen cooked meat, no shit. The process of Barbecue is specifically American.
      3. Barbecue does not refer to cooking meat, but rather the specific process in which it is done.
      4. If you find Wikipedia biased, then what sources would you like me to use?
      5. If you only deny any resources used then you clearly have confirmation bias in the 3rd degree
      6. If you read the article you would realize its not as simple as setting your food on fire
      7. If Wikipedia was truly biased for Americans ,i don't think they would credit Native Americans with anything. We killed millions of them, but you probably didn't google that either
All that typing just to be wrong

I admit, I didn't really like it. The BBQ out there is chopped up to the texture of a tuna sandwich and it's just not my thing as I like feeling the texture of the meat. I made the flight from the west coast to Charlotte three times (followed by the drive to Lexington) to try to see if I just wasn't "getting" it, but I didn't care for it. I did like the women in Lexington though.

A pig pickin' might be more up your alley, then.
A whole hog is cooked just as it appears in the video, only the pitmaster lays it out. Guests line up and pull the meat from the bone. Sauce is optional if you're not into vinegar.
I'd recommend picking from the cheek, the belly, or the right along the back.

I love Texas BBQ, but nothing beats a pulled pork sandwich from eastern North Carolina.

Raised in Kansas, now live in east NC. I miss sweet beef bq and NC pork bq is on the other end of greatness. Both are great foods made by the best. Anything tastes good when you are hungry and it's even better when someone else cooks it.

Throw some red pepper flakes in there when you chop it. Chop it fine, too.

I like my BBQ pulled. Some people will chop it into mush.

I like the NC Stlye of bbq except for the over chopping and nearly mincing it up . I like it much more chunky

"Chimley"? Bless his heart. I've been a subscriber to National Geographic for over 50 years now and never saw a section covering the culinary arts. This was more of an infomercial than a short story about BBQ.
