    FYI : Those large yellow cucumbers are great for making German Mustard Pickles called " Senfgurken ". I miss them, they were outstanding.

      Note: You can cut into sticks or chunks: The old yellow cucumbers are better for this recipe and that makes it great when your stock gets out of hand and goes yellow before you use them for other pickle recipes. They should be pealed, seeded, and clear water washed.
      German Mustard Pickles (Senfgurken)
      Makes 2 to 3 quarts.
      • For the Pickles:
      • 4 1/2 pounds pickling cucumbers or English cucumbers
      • 1 onion, sliced
      • Fresh dill weed sprigs
      • For the Brine:
      • 2 cups white-wine vinegar
      • 2 cups water
      • 2 1/2 cups sugar
      • 1 tablespoon yellow mustard seed
      • 6 juniper berries
      • 1/2 teaspoon whole coriander
      • 1/2 teaspoon whole black peppercorns
      • 1/4 teaspoon whole caraway
      • 1/4 teaspoon whole dill seed
      • 1/2 teaspoon whole allspice
      • 1 crumbled bay leaf
      • 4 whole cloves
      • 1/8 teaspoon powdered ginger
      • 2 tablespoons salt
      How to Make It
      1. Peel 4 1/2 pounds cucumbers, cut them in half lengthwise, scrape out the seeds, and then cut into 1/2-inch chunks.
      2. Layer them in 2 to 3 clean quart canning jars together with some sliced onion and fresh dill sprigs.
      3. In a large nonreactive (no aluminum) saucepan, make the brine by bringing 2 cups white-wine vinegar, 2 cups water, 2 1/2 cups sugar, 1 tablespoon yellow mustard seed, 6 juniper berries, 1/2 teaspoon whole coriander, 1/2 teaspoon whole black peppercorns, 1/4 teaspoon whole caraway, 1/4 teaspoon whole dill seed, 1/2 teaspoon whole allspice, 1 crumbled bay leaf, 4 whole cloves, 1/8 teaspoon powdered ginger and 2 tablespoons salt to a boil. Cook for 3 minutes or until sugar and salt are dissolved.
      4. Pour the hot brine over the cucumbers in the jars to within 1/4 inch of the rim of the glass. Close immediately. Store in a cool spot or refrigerator. If you do not want to process further, keep them refrigerated or use proper canning procedures for long term pantry storage.

      @@1gr8lpta I too, would like to find a sugar free version that is safe to can. That's one of the reasons I can't eat them now. -also diabetic. (they are best canned because they sit for a while absorbing the flavors)

    For the two of us and to give away an overabundance, we only need about 3 cucumber plants, two okra plants, three 5 foot rows of successively planted green beans, about 6 tomatoes, etc. Successive planting is the best way to not let the crops get away from us and have less to go in the composter.     Those are all new ways to use the cucumbers. I've made old fashioned add him pickles & relish. But never fermented them. Nor have I dehydrated them. When I get my new homestead I'll have to try some of these ways. Thank you.

    Fermenting is soooo healthy! Food actually ends up being healthier than when they go into the jar and I also like how crunchy they stay

      I have never fermented before. I just know I love to garden and want to grow all my food. No more store bought anything - well as much as I can. My daughter has the chickens and the eggs are wonderful! Wonderful family!

    Back when I was canning for my family I remember slicing my files and packing them, a clove of garlic, a handful of dill and.salt in my jars, sealing them and putting them on a shelf in the basement and they'd be.pickles in no time. I'm sure I've missed a step , but they were great dill pickles. Maybe we added a bit of black pepper! It's too long ago for me to remember?
    Those are find memories! :-)

    I love pickles but never made any. I get intimidated when it comes to fermenting and canning pickles which I've never done either. At some point I'm going to have to get over my fear of both and just do it.

    I love my fermenting lids!!!! I bought some last summer after watching you do a ferment. I’m a fermenting fan now. I’ve done coleslaw, mixed vegetables, and just peppers and they turned out wonderful.

    I love the beet juice. Yes, cucumber with mint or apple or ginger or lemon or beets... yum. The goats are loving the cukes, nice and juicy., I also love the fermented cukes,....yum! The fermented relish Lacie did looks yum too.

    Another thing to do with cucumbers is to make Benedictine and dehydrate the pulp and grind into powder. Use as a hydrating drink or into smoothies.

    You can slice the cucumbers and put in a water jug it's very refreshing.

      Yes, cucumber in water makes an excellent electrolyte better than gatorade or those other colored drinks.

    I like to add garlic slices and dill to my fermented cucumbers. Sounds like you guys like garlic…since you put garlic on your cucumber chips. Kale and garlic is good in the dehydrator too. I grow lots of kale.

    Using cucumber juice.... You can puree some other fruits like strawberries or blue berries, and add honey and make POPSICLES!!!!

    I just love this channel! Blessings to the entire family.
    This is the recipe I use when making cucumber juice:
    Cucumbers
    Ginger for a little kick
    Lemon or limes, whatever your preference
    Water
    Sugar, to taste
    A little almond essence
    Chill and drink.
    N.B. If you juice the cucumbers with the skin on, you get an earthier taste.
    Love this drink especially in the summer

    Love cucumbers anytime of year. You can spiralize them into (noodles) and use your favorite sauce. Tahini sauce, it's creamy and balance out the fresh cucumbers. I juice quite a bit, love to juice cucumbers. To make it palatable for the little ones, you can add apples and lime-lemons, some mint to bring out spring freshness. The possibility is endless.

    Thanks for sharing! I never new cucumber chips! How do they taste? Your video really helps because I am getting a lot of muncher cucumbers! Last year I got no cucumbers out of garden and that was a first for me! So I planted 25 muncher cucumber plants. I actually got a picture of bee in the flower of a cucumber!

    Love the cucumbers. My grandaughter likes growing the lemon cucumbers, and I grow a white cucumber that was handed down for years along with the normal market more and Boston pickling.

    I have made Poor man's Cucumber Caviar or Roe and prefer it to the Real Caviar/Roe.
    Peel English cucumbers, cut open and remove the soft seed section with a spoon then dice the cucumber into 1/8" to 1/4" bits.
    Saute in a little cooking oil until they start to become a little rounded and change opaque in color.
    Serve on cream cheese topped crackers or add to sour cream for garnishing appetizers or salads. You can change up the flavor by adding your favorite spices. Delicious hot or cold 😋

    YOU NEED TO MAKE CUCUMBER GAZPACHO!!! And can the GAZPACHO for a quick cool lunch on hot summer days [I remember cucumber gazpacho being a favorite since I was a kid]!! For Cucumber Juice, when you add a little lemon and mint [Add a touch of sugar and salt] MUST BE COLD~! ...... I drink gallons of it! [I also replace the Lemon with ACV occasionally]

    Ah RIGHT ON MAMA!! I spoke to you soon, that’s exactly what I was thinking and trying to describe!!
    Too tips/thoughts:
    I grew up with a big garden and chickens and my mom used to dehydrate stuff and I remember it used to take forever… I recently got an air fryer convection oven thing and it works the same way but a lot faster. But if time isn’t an issue then what you’re doing it’s perfectly working for you just wanted to share that
    Secondly when you juice things you lose all the fiber which is a big part of what makes it so good for you and then it goes to waste unless you use it for something else… Juicers are a pain in the butt to clean too so I find it better to just make smoothies in a blender and then you don’t lose anything and all you have to do is rinse it with water turn it on and dump it out and you’re done!

    We feed some to the chickens like you do! Always seem to have a abundance when it comes to cucumbers

    Add some lime juice and sugar and a little water to your cucumber juice and the kids will probably love it!

    You should try blending Cucumber and Lime. Taste even better.
