I made popsicles this yr using coconut milk as the liquid. I puréed a banana, some freeze dried strawberries, and a mandarin orange or two. The recipe called for kiwis, but when I reached for them, I realized they’d gone bad. That’s why I grabbed the mandarin oranges. They were so so good.
