  • Creating Simple Meals with Home Canned Foods is something that makes life easy. Join me as I make two different home cooked meals from my Canuary projects, which will include chicken, pork, tomato sauce, and home-canned potatoes.
    Have you ever wanted to make enchiladas, but didn't have tortillas at home? If so, this is the perfect solution! It was a bit spicy, even leaving out the jalapeno and hot sauce, but with some sour cream, the kids love it. We topped this simple meal with broken tortilla chips.
    Our second meal consisted of homemade hawaiian buns for pulled pork sliders. These beautiful little sandwiches were topped with homemade saurkraut, and serrved with a side of homemade, homegrown potato salad. Needless to say, this one was an instant hit with the kids!

    I made a pork in spicy broth last month and we had our first jar yesterday - I turned it into soup, I think the next jar we will do the sliders - they looked really good and I use that same recipe for the rolls.

    Was the heat mainly from the poblanos? This looks really good. Thank you... Sorry, I didn't hear you say you would modify the chili powder next time. Okay, so easy on the chili powder.... Got it!

      There is chipotle chili powder was a bit more than we needed. I only add 4 small slices of the poblano. The seasoning was actually really good, just a tab much. The only one who found it extra spicy was the guy who refused the sour cream.

      We have experienced a major illness with one of our kiddos, and that has given me a lot of perspective on what’s important and what’s not worth stressing over.
      Just enjoy them. They will never be this little again, or so I told myself until I had 8, 6, 4, 2, and NEW!
