      As has been said before, many times in fact; MrBeast and his consequences have been a disaster for the TH-cam content creation.

    In Russia, Belarus, and Lithuania they don't kill the sturgeon but using non-lethal methods like massaging the fish to get 80-90% eggs through a small incision on the belly. In return the fish not only survive but can still produce one or two more batch of eggs before being sent to harvest their meat instead. China and the USA are currently the top producers because high volume of farm fisheries and less concerned of reusability. Different buisiness models I guess.

      The live methods are more logical. If it's good caviar, you can then choose to breed it. This is workable, but less effective if you actually want quality.

      The Beluga (sturgeon) are critically endangered and they produce the most sought after caviar in the world and they are native to the the countries that you mentioned...I should hope you guys do your due diligence ! The caviar market is going to wipe the species off the planet...and its all for the RICH!

      Are you sure about this? I thought fish would be similar to human females in that respect, meaning that they hatch with a fixed amount of eggs, that can only decrease from that point forward, but that they can't produce more eggs.

    I would also remind people that "caviar" is sturgeon roe. There's plenty of cheaper fish roe from other fish that isn't as expensive, try paddlefish roe, it's almost as good and way cheaper

      My first experience with fish roe came from a rainbow trout I caught myself as a kid. I've yet to taste better.

      Yes, trout roe can be REALLY good if you have the perfect fish and the patience to do it right... I was lucky to have some from a big fat 7lb Lahonton Cutthroat mama a few years ago (Pyramid Lake, NV; that's pretty big for a trout)... I would've released her if I had caught her, but she was delivered (alive) to my doorstep by my fisherman friend, so what could I do? I took out the roes, cleaned them (it took many hours and many gallons of water; I had to do it egg-by-egg, since I didn't have the proper equipment), and salted them... The flesh itself was extremely greasy/oily, but the day-old eggs were very tasty; we enjoyed them with lemon and dill and shallots on rye toast.

      i absolutely love fish roe! itd be cool to try caviar some day but i highly doubt id go out of my way to actually buy some unless i suddenly get really rich lol. for now i will enjoy other kinds of fish roe instead 😅

    I DO like the caviar farms that have bred to be able to pull the eggs from LIVE females.
    Smaller amounts of caviar, but no culling needed.
    This place is fine, though. No waste, and that meat looks **HEAVENLY**. I'd kill to try it.

      I do not like the wasteful companies. I prefer the caviar farms that keep their fish alive cause most just cull the females and do nothing with the meat. This place does not do that. That is good. A+! I still have a preference on companies I'd buy from, if presented options with info.

And older, bigger fish make more, and it's better quality, and in caviar being even a little bit better means commanding much higher prices. So getting multiple harvests from one fish could improve their business. Or maybe not. They'd have to do the math because there's no way we can know all the parameters from our basements littered with McNugget boxes.

      I think I saw a video once where they turned the fish upside down and just massaged the eggs out of it.
      The harvest is definitely much less compared to the whole block we see in this video, so it had to have been priced maybe triple what this sells for to be worth it.

      @@TPixelAdventures We maybe saw the same video. The first batches are harvested from live fish to let the fish grow older and produce better product, once it`s fully mature fish with best caviar it`s slaughtering time.

    For those that don't know: the term "beluga" in beluga caviar relates to the kind of sturgeon that the fish eggs are gathered from. There are other kinds of caviar that aren't from beluga sturgeons and they tend to be cheaper, the most common being ossetra and sevruga caviars.
    None of it is really worth the price though, if you ask me.

    This is one of the most interesting videos that I personally have ever watched. I have been an on line user since way back when bulletin boards were the way to go, then the internet, then myspace, youtube, instagram etc etc till today. (my mates old man was in the csiro so we were spoiled with online access in a way). When I see some of the mindless self centered rubbish that gets posted now, it renews my faith to see a video like this. I love cooking, food, wine etc but I have never felt that I have enough money to justify tasting real caviar. But I am going to make sure I experience this once in my life. The amount of effort that goes into producing it makes me think it may be worth a try. Thanks Joshua. I really like your channel content

    One thing I will never understand: They say to not use metal spoons for caviar because it alters the flavour yet EVERY SINGLE STEP here involves metal utensils to procress the caviar and they get shipped in METAL TINS.

      yeah, the metal utensil bit is bullshit from the days when silverware was actually made of silver. And not because it affected the caviar, but because it ruined the silver plating due to salt corrosion.

      It does not matter when handling the caviar, it's simply that the flavor of steel is said to be noticeable in the mouth when tasting caviar. So you can totally use metal utensils when handling caviar, but shouldn't use a metal spoon when you want to eat the caviar from the spoon. At least that's the theory, it might be a myth.

    I can't believe I wasn't subscribed to this channel yet! I've been watching for years, not even noticing that it was just the algorithm feeding it to me. My apologies to Mr. Weissman and crew; these videos are among the best out there. (I trust Josh's recipes before G. Ramsay's, any day.)
    This channel gets it right, in the same way as the old Food Network TV shows like "Good Eats" (with Alton Brown) and "Taste" (with David Rosengarten). Bravo! 👏👏👏

    You could have used caviar from a different fish, and imitation in the test, that stuff goes for 5 to 20 euro...but it's probably not actually caviar, still interesting what the difference is in taste.

      The best fish eggs were from the big minnows I caught as a kid. Fried the minnows and sauted the bright yellow eggs. Not bad. I've had the best caviar Russia can provide but ack. You can have my share of any grade. I'd rather pay the rent.
