My family would only buy the cheap box mixes when I was little, so we have a bunch of tricks to improve them! Add a little more salt, a teaspoon of espresso powder, a cup of chocolate chips or chunks!

I recommend starting with 25% more butter by volume so that you end up with an equivalent volume of brown butter to oil. Also, adding an extra egg yolk and using milk instead of water helps to up the fudge factor without pushing it too far

If Ghirardelli is the best brownie on the market right now either everybody else has gotten worse or they've gotten way better. I think you might be onto something with him eating that one first. I mean don't get me wrong their mixes are fine they just don't have very strong chocolate flavor and tend to be rather expensive with a lot of mix in that result in an uneven texture which is not really feeling like a brownie anymore to me. They make dense cake cubes with chunks of other things in them or squishy stuff on top.
I was surprised that Ghirardelli Triple Chocolate mix wasn't part of the test but then I realized that it's only available in a 6-pack at wholesale stores like Costco and then was no longer surprised at its exclusion.

I have a trick to make any brownie mix turn out better: mix the egg and oil together until completely emulsified, then mix in the water, before adding to the dry mix. It makes such a difference to the texture, vs dumping it seperately into the dry mix and hoping it will distribute properly.

Ghirardelli is the only one I’ve ever seen a real chef, any real chef (who always tells you to make your own because it’s better) compliment. Also, triple doesn’t refer to the type, but rather the quantity, I’m almost positive.

I would LOVE a series where you taking a bargain boxed meal/dessert, and find ways to really enhance it. Does it just need some extra sugar and salt? Maybe you gotta put a lot of work into Hamburger Helper to make it an AMAZING meal. Maybe that Viola Frozen Meal just needs some more frozen vegetables and seasoning to really enhance a cheap meal.

As far as I am aware Duncan Hines is the only one of these mixes that doesnt add milk powder. This means if you're lactose intolerant it'll hurt you less.

My mom used to make brownies all the time for events around town, she'd send them to the football team, take them to church bake sales, eventually they were famous enough for people to specifically request "Susie's Brownies" with great excitement. They were just a Betty Crocker mix, I think they used to have one just called "Supreme" but I think that eventually turned into the Supreme Triple Chunk. She always told people it was just a box mix but she couldn't convince people that she didn't have some special ingredient to add.
There are 3 purposes a brownie can fill. Stand alone, bar base, and sandwitch. Each purpose has different needs. Would love to see babish take these mixes and combine them into Frankenstein combos for a perfect sandwich and or bar base brownie.

Ghirardelli use to make a Triple Fudge Brownie. They are my favorite brownie of all time. Not sure if they still make them or if they changed the name. The Dark Chocolate look exactly how they did but if I remember right they had dark chocolate syrup which was way better than their other chocolate syrup. It's possible they are the same product just the dark chocolate don't have the syrup. I'll have to try them next time I'm in the mood for brownie.
I do not like chocolate chips in my brownies, so my personal favorites are the Duncan Hines fudge brownies. Replace about half of the oil with peanut butter and you’re golden.
When I moved out on my own and started doing my own grocery shopping, I found the Ghirardelli Dark brownies and haven’t turned back. I have added flaky salt on top after baking or I’ve drizzled on salted caramel ice cream topping on before baking. Adding high quality chocolate chunks before baking is another great way to make them. They are great on their own and can easily be punched up. ❤

i don't like having chocolate chips in my brownies because when they're cool i don't like running into hard chunks in my brownies. I also use butter instead of oil, mix in dark chocolate when I melt the butter to up the chocolate-ness, and sometimes a shot of espresso in with the liquid. I like both edges and center pieces but for different reasons, really i'd just like the whole pan to myself.
Ok, take my advice on the Ghirardelli ultimate mix... If you take some creative liberty and use the included syrup as a swirl instead of incorporating it into the mix homogeneously it's actually BOMB. The textural difference makes it my favorite box brownie mix.
King Arthur's Gluten Free are by far the best ever. Even friends who eat gluten have said they are better than any others they have had. You must try them!! Add a little espresso powder to enhance the flavor 😍
I’m from the UK so not sure if the recipe is different but Betty Crocker’s fudge brownie mix is absolutely the brownie of my childhood too! We always had some in stock :) They remain the ones I’d get if I bought brownie mix, however we don’t actually have any of the other brands in England so I can’t speak on those!
Ghirardelli makes the BEST brownies! Pro tip: Get a bar of 70% or higher dark chocolate, melt it, and mix in to the brownie batter. They'll be incredibly fudgy, rich and chocolatey.
I don’t know what made me decide to try the Ghirardelli Dark Chocolate, I think because I prefer dark chocolate over milk chocolate, but they are by far my favorite brownie mix. I like a cake like brownie, so I follow the instructions on the box to make them cake like.
I am very happy that my girl Betty Crocker Fudge was perfectly average. I add a little salt to mine every time, and one time for a potluck where I was trying to impress people I also added some instant coffee, they’re a workhorse and I’m happy
I can't believe you didn't try Kahkow it's amazing chocolate made without slavery or abuse (unlike most chocolate brands) & they made their own brownie mix as well as just making amazing chocolate.

Shout out to Aldi brownie mix-my favorite! Ultra fudgey 😍 I bake them in a 13x9 so they’re way “shorter” and I think that helps with the texture!

Ghirardelli brownies will always be my go-to! I substitute milk for the water and add an extra egg yolk for utterly irresistible!
i don't like having chocolate chips in my brownies because when they're cool i don't like running into hard chunks in my brownies. I also use butter instead of oil, mix in dark chocolate when I melt the butter to up the chocolate-ness, and sometimes a shot of espresso in with the liquid. I like both edges and center pieces but for different reasons, really i'd just like the whole pan to myself.

Ok, take my advice on the Ghirardelli ultimate mix...
If you take some creative liberty and use the included syrup as a swirl instead of incorporating it into the mix homogeneously it's actually BOMB. The textural difference makes it my favorite box brownie mix.
This was not a blind taste because he was still able to see the brownies.
King Arthur's Gluten Free are by far the best ever. Even friends who eat gluten have said they are better than any others they have had. You must try them!! Add a little espresso powder to enhance the flavor 😍

I’m from the UK so not sure if the recipe is different but Betty Crocker’s fudge brownie mix is absolutely the brownie of my childhood too! We always had some in stock :) They remain the ones I’d get if I bought brownie mix, however we don’t actually have any of the other brands in England so I can’t speak on those!

Pro tip: Get a bar of 70% or higher dark chocolate, melt it, and mix in to the brownie batter. They'll be incredibly fudgy, rich and chocolatey.

I don’t know what made me decide to try the Ghirardelli Dark Chocolate, I think because I prefer dark chocolate over milk chocolate, but they are by far my favorite brownie mix. I like a cake like brownie, so I follow the instructions on the box to make them cake like.

I am very happy that my girl Betty Crocker Fudge was perfectly average. I add a little salt to mine every time, and one time for a potluck where I was trying to impress people I also added some instant coffee, they’re a workhorse and I’m happy
I can't believe you didn't try Kahkow it's amazing chocolate made without slavery or abuse (unlike most chocolate brands) & they made their own brownie mix as well as just making amazing chocolate.
