People write their wishes on a piece of paper and put it together with an offering in the wickerman. When the ritual starts and the whickerman burns, people believe that God (or Gods) listen to their wishes (not necessarily granting them). Some wishes however can be quite personal, The music and atmosphere it creates can be quite emotional.
What DJNightchild wrote. Some of the prayers and wishes tied to the tree will be for friends and family that are sick, some for those that have died, some for difficult personal situations. Rituals like these sometimes do contain sadness to go along with those, but they're cathartic in that you can see a tangible symbol of your concerns there in front of you that can help you feel less powerless, and you can look around you and see you aren't alone in troubles or remembrances.
