Coconut Biscuits like my granny used to make 😍

Coconut biscuits are a nostalgic favourite, it’s that warm hug of a grandparent. This recipe was passed down from my mum to me and has become a staple in our family for Eid. The smell of the coconut toasting while baking draws us all to the kitchen, counting down the minutes to iftaar, and with a fresh pot of tea, we can’t wait to grab the first biscuit off the tray after iftaar.
After which mum quickly packs it away to wait for Eid day. It’s one of those recipes that must be made during Ramadan.
It’s high time I finally shared it with you too.
Coconut Biscuits by @fehmz
500g salted butter
1 cup oil (250ml)
2 cups castor sugar (423g)
4 eggs (230g)
6 cups @snowflake_sa plain flour (720g)
6 cups desiccated coconut (600g)
6 tsp baking powder (29g)
Preheat your oven to 180 deg C.
Beat the butter and sugar until fluffy in your mixer with the K-beater. Add in the oil while beating to incorporate, also add the eggs one at a time. Mix together your coconut with the sifted flour and baking powder, reserving one cup of flour. Add the mixture to your batter to form a soft dough, add in the reserved cup of flour until you have a non-sticky but soft dough.
Roll your dough out, about half to 3-quarter centimetres thick. Cut into shapes of your choice. Decorate with sprinkles, glacé cherries, anything you like.
Bake in your preheated oven for 6-8 minutes until golden brown.
Stack and serve with a hot cuppa tea 😍
Store in an airtight container on the counter for 4-6 weeks, or in the freezer for 4-6 months.
