in german, s is usually pronounced like english z ss is always pronounced like english s, but is used after short vowels ß is pronounced like english s also, but is used after long vowels in german, generally double consonants are pronounced the same as single ones, but are used after short vowels and single consonants after short. since s is often pronounced differently when doubled or single (again, s vs z using english spelling), it makes sense to have a letter thats always pronounced like double s but is used after long vowels, as the consonant(s) used after a vowel is often the only way to tell its length. hence, ß. its one letter so it works like a single consonant, but its not just s so people know to pronounce it as s instead of z.
As someone who's natal language is French, I'm incredibly surprised as how much closer German is than English, at least in the pronunciation of the letters

as a someone from Denmark, we get taught german I school. I also decided to do it on duolingo, and I have been doing it for 170 days. i don't think german is very hard, because it's very similar to Danish. We often visit germany to buy candy and soda because it's a lot cheaper in Germany, and it's only an hour away.
We use "ß“ when the "S" would normally get pronounced like a sharper "S" so "Ss". We can’t use "Ss" though when there’s a long vowel before the "S" so in that case we use "ß". As a danish person who have been learning German at school for four years, i can totally agree with the grammar being difficult. We always got told that German was one of the languages with the most difficult grammar. I do appreciate learning it though, because it is such an important language for Danish people!

The "Eszett" was removed from the Namibian German curriculum in 1996, but a lot of people still use it. If nothing, us Namibians are terribly nostalgic.
