  • 大家好,今天和大家分享這款聖誕造型紅豆麵包。聖誕節快到了,又是一年的聖誕節,我這就來烤了聖誕造型的麵包,滿滿的氣氛和期待。麵包的內餡放了紅豆餡,但是可放上個人的喜愛的餡料唷!麵包的本體口感像歐包,加了抹茶的麵包,每一口都吃到抹茶的香氣,搭配了甜甜的紅豆餡,非常的一極棒和滿滿幸福聖誕感呀!小朋友一定會喜歡!
    **大家可以使用麵包攪拌器來攪拌麵團喲!這食譜做出來的麵包依然可口鬆軟好吃。
    📎食譜 Recipe
    00:40 材料配方 Ingredients: (4個,4 pieces)
    *鮮奶90克 / *Milk 90g
    細砂糖 30克 / Castor sugar 30g
    即溶酵母 3克 / Instant yeast 3g
    高筋麵粉 170克 / Bread flour 170g
    低筋麵粉 30克 / Cake flour 30g
    抹茶粉 8克 / Matcha powder 8g
    鹽巴2克 / Salt 2g
    鷄蛋 1個(大約57克)/ Whole egg 1 pcs (approximately 57g)
    無鹽奶油 15克 / Unsalted butter 15g
    紅豆餡 120克 / Red bean fillings 120g
    聖誕糖 Christmas candy
    *根据面粉吸水性不同,鮮奶可以自己再調整一下
    *According to the different water absorption of flour, you can adjust the amount of milk based on your bread flour
    製作步驟 Instructions:
    00:49 1.將鮮奶,細砂糖,酵母,高筋麵粉,低筋麵粉,抹茶粉,鹽巴和鷄蛋放入主鍋,設置揉麵功能4分鐘,揉麵至麵團可拉出粗膜。
    Place milk, sugar, yeast, bread flour, cake flour, matcha powder, salt and egg in the mixing bowl. Set the kneading function for 4 minutes to mix well until dough is formed.
    01:59 2.加入無鹽奶油,設置揉麵功能5分鐘,揉麵至麵團光滑可拉出薄膜(每个人的攪拌器不同,請大家自己斟酌攪拌時間)。
    Add unsalted butter,then set the kneading function for 5 minutes to mix well until the dough is smooth and form a thin film.
    02:29 3.取出麵團,搓揉麵團至表面呈現光滑,并將麵團往下方摺叠的手法,形成一個光滑的圓球。將麵團放入碗中,用乾淨的佈蓋上,之後放到室温28攝氏度的地方發酵60分鐘或發酵到兩倍大。
    Take the dough and knead it till a smooth dough then fold it around and underneath itself shaping a smooth ball. Place the dough in a bowl, cover with a clean kitchen towel, and let it ferment for 60 minutes at 28°C room temperature, or until doubled in size.
    03:00 4.一次發酵后, 用手指蘸上麵粉然後在麵團的中間戳一個洞,如果麵團不塌陷就代表發酵的剛好。取出麵團,排氣,然後分割成4等份。取出一份麵團排氣,往下方摺叠的手法收緊滾圓。重複排氣滾圓剩餘的麵團,之後用乾淨的佈蓋上,静置15分鐘。
    When the first fermentation is done, dip your finger in the flour and poke a hole in the middle of the dough, if the indentation remains, it means the dough is right proofed. Take the dough, squeeze out the bubbles by tapping and divide the dough into 4 equal portions. Take one piece of dough, squeeze out the bubbles by tapping and folding it over itself. Using both hands, mold the dough into a ball. Repeat the steps for rest of the dough. Cover with a clean kitchen towel and let it rest for 15 minutes.

    After 15 minutes, take one piece of dough, squeeze out the bubbles by tapping and roll the dough out flat into oval shape, then add the red bean fillings on the dough. Lift up the three sides and seal it tightly then place the dough into the baking pan which lined with parchment paper. Repeat with the rest of the dough. Cover it with a clean kitchen towel and let it proof for second time for about 60 minutes at 30-33°C room temperature.

    After second fermentation is done, sprinkle some flour on the surface of the dough, then use a scissor to cut the pattern.
    05:46 7. 烤箱預熱170攝氏度,入烤箱烘烤18-20分鐘(每一台的烤箱不同,請大家自己斟酌烤箱溫度与時間)。當麵包表面呈現金黃色時,用锡纸蓋住麵包的頂部,以防止麵包表面烤焦。从烤箱中取出, 輕敲幾下排出空氣, 之後將麵包轉移到凉架上晾涼。完全放涼後,將麵包的底部剪開一個口,然後把焦糖餅乾插進洞口里, 之後放上聖誕糖裝飾。聖誕氣息滿滿的紅豆抹茶麵包就可以享用啦!
    Preheat the oven to 170°C, bake for 18-20 minutes (Everyone's oven is different, you have to adjust the temperature and baking time). When the surface of the bread is golden brown, cover the top of the bread with tin foil to prevent the surface from burning. Remove the bread from the oven, tap on the table a few times to remove air bubbles then transfer to a cooling rack. After the bread completely cool down, cut a hole on the bottom of the bread and insert the lotus biscoff biscuits into the hole, then add the christmas candy as decoration. Then the Christmas red bean matcha bread is ready to serve!
