I love EPCOT when there is no festival. It is easier to appreciate the true experience of World Showcase.

We've also noticed that when you visit closer to the start of a festival it's always more crowded. Give it a month, and then the booth lines and overall crowds diminish, and you can enjoy it without all the crowds. But those early morning strolls around world showcase are really nice too!
