Strange, it seems you need a 12V battery to make the lights go on? Also seems that the amount of incoming water (ref. beginning of video) is way lower than what is getting out at the end. Strange, very strange. Would you be so kind to show the whole thing working without all the casings around the electronics?

The 12V stores the energy generated by the turbine. The rotating component in the center is the generator assembly (armature + stator + rotor). This creator has other builds where the generator circuit is wired directly to the lights, and in those example you can see how the the lights turn on and off when the the turbine starts/stops rotating.
As for the water flow from beginning to end... this is the reason we use dams to create reservoirs. We take a low flow source, like this barely moving stream, and store the water so that head pressure is created. This head pressure is what drives the turbine and determines the amount of energy generated. In normal operation, we would expect to cycle the opening and closing of the turbine flood gates to refill the reservoir and restore the head pressure that will decrease over time as electrical energy is generated.
