    Good video. Very well presented. As a home barista, I completely agree with the purge & consistent process concepts. They do help. Additionally, I find that using a small vacuum at the inlet & output side of the grinder daily use helps to remove residue. I use a small, hand held battery powered Dyson. It helps remove at least the loose residual grinds. The vacuum is also very useful in cleaning up my work area.

      " ...we are all about single dosing." No, we aren't. I own a Eureka Olympus KRE with a glass hopper and I wouldn't trade it for any other grinder on the market.

    Sorry for the lengthy comment but this video couldn’t have come at a better timing as I’m currently looking into buying a low-retention grinder.
    Everyone keeps talking about low/zero retention and single dosing. This video is simply the only source of true information on grind retention. Thank you so much for making this super informative video.
    Purging before every grind is a non-issue in my opinion. I usually make 2 shots in a row so will only need to purge once a day, which will cost me a little more than one full espresso per bag -- around $1 per 250g/9 ounces of coffee I consume per week. If I consume 52 bags a year, then that’s a $50 extra per year that I’m willing to pay for my comfort and time saved.
    For those really worried about grind retention, you should get titan hand grinders like HG-1, Kinu M68 and Helor Stance. Requires around 20-25 seconds of work and single dosing the beans each time.
    I currently own a Kinu M47 which I use daily to grind my espresso and I pull great shots, although the grinding process has gotten tiring as it takes me 45-55 seconds to grind for espresso. A 1 second purge and 5 second grind sounds about perfect.
    I’ll make my final decision on upgrading to an M68 or getting an Olympus / 65E Speciality at the end of the month.

    As I just ordered a Eureka Mignon Libra, I'll record 1,3g on the "one cup" button to clean my grinder in the morning and then select 18g on the "2 cups" button for my expresso ! And I subscribe.

    You guys are great - very informative video. I learned I may be over-purging my Mazzer Mini E, used for home use. Every morning I purge for 5 - 7 seconds (I use the hopper to store a couple day's worth of beans, and do not single dose). Sounds like too much. I also purge if it has been an hour or so since the last grind session. That may not necessary.

    Keep in mind measuring ALL the coffee stuck in a machine is basically the absolute worst case scenario, if you find 2g of coffee in there, likely maybe 1g is stuck in the crevices for good and wasn't going anywhere anyway. I just cleaned out my Barataza Vario and found maybe a gram of grinds in the circuit board area, not good, but pretty sure that wasn't making it into my next shot.

    Hi, thanks for the great video. You mention that the Eureka Atom has small space between the burr and the chamber wall, but at 4:01 it shows that the space is really large. Please can you clarify?

    Hello, I have a T-64 I purchased from you. here is my question. You state that grind retention is 4.5 g. how much of that 4.5 grams is replaced with new coffee being ground vs coffee simply taking up some space and being relatively fixed in place. ( if I put 20 g in and grand 20 grams out is 4.5 g of what I get out old coffee an 15.5 g new grind?

      Functionally, yes, about 4.5g of that 20g would be old coffee. This is why we recommend purging a few grams of coffee to flush out those old grounds before you grind your first dose.

      By this test method I'd say it's the worst case scenario. But I don't think necessarily all the coffee stuck in there will come out in the next shot some might be forever trapped lol.

    I see that you guys are using grooming tools at 1:23. May I ask A) if you had to choose one, would you choose a leveler or a tamper and B) which model(s) you guys prefer? As a newbie home barista, I suspect that these tools might help me produce more consistent results.

      That's a tough one! We've become pretty big fans of Saint Anthony Industries' Wedge distributer tool and Levy depth calibrated tamper. If I were picking tools for myself and trying to stay on budget I'd grab the Levy and use a standard tamper. Ensuring that your tamp is consistent and level is relatively easy, but ensuring proper distribution can be tricky. The Levy makes it dead simple.     My sette 270w retains 1.8 to 2 grams coffee every time i clean it . If you see on the video the holes on the plastic part that allows the coffee to run through, these holes are getting clogged and there is about 1.8 grams ! Also as i see in the video the ground looks pretty coarse that means less retain less clog!

    Considering the low retention of the Sette is it really necessary to purge?

      Since the Sette does have nearly zero retention, it's not quite as necessary if you're single dosing. If you plan to leave some beans in the hopper it's still a good idea so purge for a second or two.

    Can one definitively say that the retained grinds which are stranded in a position in the grinding chamber are necessarily evacuated with a purge, or does some portion of the stranded grinds remain stranded to age further?

      That's a really good question. The short answer is no, but it's not a big deal. To elaborate, the particles that end up being flushed out by the purge are, to some degree, random. The more coffee you use in your purge the more certain you can be that all the old grounds have been flushed out. That said, I've encountered very few grinders that aren't almost competely rid of stale grounds with just a few grams of purge. I'm determining this primarily by observing the effects of flow caused by stale coffee. Only a small percentage of the retention stagnates, so the effect is relatively negligible. That said, you've definitely piqued my curiosity. I'll devise a test for this soon and see what I find, so thanks!

      It's about the same, but often slightly less due to the smaller burrs and burr chamber.

    What's the grind retention of a Baratza Vario?

      I've got a Baratza Encore and have never purged. After a month of grinding about a kilo every 10 days I cleaned it and only found about a half gram of retention. Conical burrs seen to have gravity on their side.

    For the Atom, I see there's a flow restricting disc (I think Niche Zero copied that?) so the weight of the coffee for single dosing should make less of an impact I would think.
    Can the same thing can be installed on the specalita if it doesn't come with one?

      Hi! I don't have the data on those grinders. However, with the front funnel, that would typically suggest they have more retention compared to a grinder with a direct chute. Hope this helps!

    I always single dose for Filter coffee. I am trying to decide between Baratza Encore and Eureka Mignon Filtro. I can get both at a similar price so price is not a factor. But I do tend to use different coffee every day and I do not want to purge coffee every morning. which should I get?

      Hi! For single dosing, the Encore and Filtro are quite similar. Most people decide based on aesthetics and build quality between the two. The Encore uses a completely plastic casing, while the Filtro has a nice metal body. Either way, you're in for a delicious morning routine!

    Is sette 270 good enough for home barista and single dosing ..compare with much expensive grinder like Ek43 or mythos 2?? Sorry for this silly comparison question 😅

      Not a silly question at all! First, the Sette 270 is a fantastic single dosing grinder for home. Grinders like the EK43 and Mythos are great, but they're really meant for shops and are a bit too much for a home. You'll deal with a lot more retention with either of those. The Sette 270 is fantastic but if you're looking to compete with cafe espresso quality, I'd recommend getting one of the high end single dosers in this video, or the new Eureka
      Atom 75.

      Clive Coffee is right, Eureka Atom 75 is definitely a beast! Any Mythos grinders are not for home use but EK43S is perfect for your private coffee bar at home... if you are into tweaking coffee and stuff. It can be used for virtually every brewing method even something extreme like Turkish and Cold Brew. But, it needs special tinkering skills like recalibrating and re-allligning the burrs. If you don't know what you are doing, it's kinda wasteful. Otherwise, it is probably the only grinder you'll need for a lifetime

    I was thinking about ordering a KRE to substitute my Ceado E37S (2nd gen) as I prefer a conical. I saw the KRE has the Blow Up system. Do you sell the blow up hopper and have you tried if it really improves on retention like Eureka claims?

    I am surching for a very good Grinder for homeuse with a little retention.
    I drink only 1 - 4 Espresso per day. I have already asked myself whether the surcharge for the ceado E35J, E35S or the new Mazzer super jolly v pro is worthwhile...how is your opinion? My focus is on the even result and as quiet as possible.

    May I ask how many times di you repeat the measurement for each grinder? Also, when single dosing on a Zenith 65 E how much coffe would you use to flush the grinder before the first coffee in the morning? Anything above 6.5g?

      Great question! I repeated the measurement three times for each grinder and averaged the numbers. Further, with most of these grinders, we've done less procedural tests in the past and arrived at very similar numbers. I wouldn't do anything over 6.5g. Generally, around here, we'll just eyeball 4-5g of coffee as a purge and our first shot will come out entirely as we'd expect it to.

    I got the new Ceado E37S for home. I only drink 1-2 coffees a day... meaning, before I grind my coffee would be advisable to always purge a portion to avoid retention for my portion? Thanks

      Too bad for the grinder. IMO, you should have just used cheaper grinder like Mignon Specialita. Your grinder is meant to be used as semi-commercial grinder, meaning its purpose is to serve about 25-50 drinks a day. Not only you should purge, you also get to move your beans in the hopper to a storage in order to keep them fresh. BTW, do you ever consider purchasing Ceado E37SD before purchasing E37S? I think E37SD is very suitable for home use because it is a single dosing grinder with the same burrs as E37S

    Hmm, that's kind of dumb if a 2.5x cheaper (270WI) have less retention and is better at single dosing than my expensive (Rocket Fausto) :/ I always thought flat burrs was superior and the way to go but then it retains more grain and is usually worse for single dosing. I guess I could just do a 1 second purge/waste every morning though I wonder honestly if that 2g of 24H coffee on 20g can really be tasted.
    Anyway if I juste waste 1$ per 35$ bag per month, I guess it's not bad.

    Say the next morning, do I purge with fresh beans loaded? Otherwise how would purge work?

      You'll want to purge before adding fresh beans to the hopper. If there happens to be any coffee left in the chamber, the small amount of retention should come out and leave your chute prepped and ready to start pulling shots.

      @@askay2kThe extra 2g will purge out with the new grind. So purge 4g in total to be safe. I will just get the bellows to do the purging without sacrificing any fresh beans.
      For home use: single dose makes sense and so retention is a huge deal and purging is required.
      For cafe settings: retention is irrelevant because you will grind shots after shots and so leaving a full pound of beans in the hopper makes the workflow so much smoother.
      I never leave beans in the grinder since I’m a home user. So I single dose by weighting and use the bellows to purge all the grounds left in the grinder. If you don’t have a bellows. It’s a little finicky by removing the hopper and just tapping the top of the grinder several times. Turn on the motor torque, it will knock out a significant amount of retention! May be only a tiny fraction of 0.01 or 0.02g still in the chute.
