I have made toffee bark with the graham crakers and toffee, but sprinkle with toasted pecans. For peppermint bark, I do it 2 ways. 1) Melt white chocolate ( chips, wafers or almond bark, which is what I use). Then spread on greased parchment paper on baking sheet. Refrigerate until hardened. Then do the same with chocolate of choice and spread over white chocolate, being careful not to mixi chocolates together. Refrigerate until hatd and break into pieces. 2) Assemble as above, except reverse chocolates, having white chocolate on top. Before refrigerating the second time, sprinkle white chocolate with crushed peppermint candy or finely chopped Andes mints ( let chocolate cool *slightly if using Andes to prevent melting). Rerigerate until hard and break into pieces.
