This is one of my favorite cuts of meat but it does best cooked fast and hot and not low and slow. As the other commenter said, course kosher salt, black pepper and a few minutes on each side at a really high temp and it is an amazing flavor unlike about any other cut of meat. What’s amazing to me is that beef short ribs, not this crosscut style, are the same meat, but basically have to be done low and slow for about 4 hours at 285. Might be my favorite cut of beef in the world.

May have to give it another try. But we just got a half beef and I told them to grind all the rib meat.

Great review my man. Glad you said the truth about them. I will try them and cook them longer

Cooking two beef racks and a package of ribs like these. (Which I’ve never cooked before.) Letting the two racks go for 10 hours at 220F. I think I’ll let the ones like these (in the video) cook at for at least 5 hours and see what happens.

Low and low. Keep them wrapped tight or they’ll dry out like jerky.

Why would you cook beef ribs on low heat? It’s supposed to be on high heat
