We have some similar ideas. Your more knowledgeable in this though 👍 I love the idea of using what you have and modifying it. I also love the Idea of setting it up for regular octane.
Since I know you went 361 for now it was cool how you pointed out the reasons why an LS would be an unwise choice. I have and like all the big three brands but each brand already has the infrastructure to accept that brand in place. Now a Studebaker Hawk is one I'd like to put an LS drive train in, front to back.
Thats a common swap for those cars. Should work well. Between a big block mopar and an LS there arnt too many differences once you get the big block working well. Its all in the tuning.
Well... a solid roller cam kit is looking to be $1,000+(cam, springs, retainers, keepers, push rods, adjustible rockers) seems like a really long walk for a short drink 😂
And putting in a LS is still the lazy way out .. you might as well put in a gen 3 hemi 727 transmission bolts right up and Holly makes like a million thing's now to do the conversion...

Do not put something other than a mopar back in it...
