I think it's the Language and the hospitality of the people. There's no pretense with Filipinos, they truly love sharing and very sincere, they are very familial. They are a split culture, Chinese and Spanish great combination.

I love all Filipino dishes as a Filipino most especially adobo , lechon , sinigang , tinola , sisig all of it. I tried other dishes like Thai food , Mexican , etc. but I can`t forget Filipino food.😀
We filipinos are creative in cooking something. We are innovative and unique in every way possible. So we have a recipe but we dont usually take that 100% to imitate the taste and what it looks like. My father and I aren't a chef but have a knowledge how to cook our own ways. We just cook what we want and balance the flavoring on it instinctively.

Kare-Kare, an ox tail dish with peanut butter, sautéed with shrimp paste, mixed with vegetables (eggplant, beans, lettuce) and the sauce combines with beef broth and bread crumbs to make it smooth kind of soup with the taste of peanut butter, shrimp paste and the flavor of the vegetables. The other favorite is the steamed vegetables with soup mixed with fish sauce or fermented fish. You can taste the freshness of the vegetables. This can go with grilled fish perfectly. ❤ Also the fermented rice and fish or shrimp and dip with mustard vegetable. ❤

The terms were given to these dishes by the Spanish as they had similar dishes in Europe (The spanish adobo/adobado and lechona taste and look different from the oldest or newest versions of the dishes, though).

It’s not true that Lumpia is part of Chinese culture. Lumpia was invented by a Filipina during the Spanish times. Lumpia Shanghai was only invented in the late 20th century. There have been many kinds of Lumpia since the first invention due to the fillings inside the wrapper, all Filipino. There has been only one kind of wrapper. And even though we have a fusion of different cultures, we have very native dishes, Spanish-Filipino dishes, and in-between. American dishes were always considered American even if we like pastas and hamburgers. I can’t say much about Chinese cuisine because I only know a little of it. But I know that Filipino dishes are many and varied, and depending on the island or region we either have plenty kinds of dishes or few dishes.
I am a chef. And yes indeed filipino food makes family or people together, its not just about cooking or techniques. Its about passion and the outcome shared with your love ones

I agree, Filipinos love balanced flavors, if you eat raw you need vinegar to cook it, good bacteria from vinegar kills bad bacteria, if you eat fatty like lechon or barbecues you need vinegar too, and salt, burn the fats with natural acidity like coconut vinegar came from fermented tuba
the other thing is that Philippines consists of different islands and provinces with each province having their own specialized version of dishes. You want the best sisig? Go pampanga. You want the best Adobo? Go manila. Tinumis or dinuguan in Cavite. etc.. we each have our own signature dishes.

As a half Filipino and half Japanese, Im surrounded and literally immersed with the best Asian cuisine and culture possible. I can't blame Gordon, his sense of smell and taste buds cannot lie. Pinoy foods are yummylicious however, clearly under-rated.
It is very true that Filipino Food are made for SHARING. The essence of which if the taste is not good, then the Cook or chef will be beaten with jokes to shame. But with fun so the Cook would strive more and make a new dish for everyone's purpose of better taste. Very seldome that we cook only for ones self, most of the time we anticipate and prepare that a guest would come over or bring your food out, you would be proud to spread your food. You should try the Moro cuisine as well. Satti, tiula itum, chicken pianggang and sweets like putli mandi, panggi panggi, daral etc. You will surely reach another level of uniqueness here in the PH!
The most featured Filipino dishes are those that are already too popular even outside of the Philippines. They have yet to discover the lesser known specialties in the provinces. Take for example home-cooked meals by the Ilonggos “Linabog nga pagi” Or “Guinat-an nga tambo” “KBL” “Guinat-an nga Gabi” “Poor Boy” “Valenciana” “Vacaritas” “Bangus Sinigang sa Bangkiling” Some Filipinos haven’t even heard of those. The Philippines is as unique as its many islands. Some food may not be a crowd pleaser, or executed by the book or to the letter, but the memories and stories in creating the dish will always be cherished by the authors and those who partake. Lechon is of of those thing that foreigner really had an impact because of its flavor. It is too fatty and look unhealthy but once their pallette starts to touch the unique flavor it drives their mind to take more bite because they never had a pork cook in such a special way .
Regarding the meat (not chicken) in chocolate sauce. This is actually “Dinuguan (Tagalog pronunciation: [dɪnʊgʊˈʔan]) is a Filipino savory stew usually of pork offal (typically lungs, kidneys, intestines, ears, heart and snout) and/or meat simmered in a rich, spicy dark gravy of pig blood, garlic, chili (most often siling haba), and vinegar.”
Its very true!! Filipino foods only taste and smells magical in the Philippines. People abroad who says theyre great pinoy chefs can never replicate it. My point is that the environment, the culture and community, the humidity, the traffic, the canals, all contribute to that magical taste and aroma of the food. Specially street foods

I like the way filipinos specially the bicol and southern luzon regions prepare their "Ginataan" they ain't afraid of the coconut milk to cream their food creamy with coconut milk.
We have our own dumpling which was ahead of Chinese Wonton. And there are records saying that noodle dish was not invented in China. Pancit was invented in the Philippines.

Siopao is not of Filipino origin. Siopao itself is Chinese in language. Sio meaning hot and pao for the bun.

Take for example home-cooked meals by the Ilonggos “Linabog nga pagi” Or “Guinat-an nga tambo” “KBL” “Guinat-an nga Gabi” “Poor Boy” “Valenciana” “Vacaritas” “Bangus Sinigang sa Bangkiling” Some Filipinos haven’t even heard of those. The Philippines is as unique as its many islands. Some food may not be a crowd pleaser, or executed by the book or to the letter, but the memories and stories in creating the dish will always be cherished by the authors and those who partake. Lechon is of of those thing that foreigner really had an impact because of its flavor. It is too fatty and look unhealthy but once their pallette starts to touch the unique flavor it drives their mind to take more bite because they never had a pork cook in such a special way .

We have our own dumpling which was ahead of Chinese Wonton. And there are records saying that noodle dish was not invented in China. Pancit was invented in the Philippines.
