Though the garlic would still be dropping to the bottom. Maybe just infusing it with garlic and then removing it before putting it in the fridge would work? Now I'm curious. A bit of explanation for the cheese. The processes cheese has a lot of sodium citrate, an emulsifier. This is what those movie cheese dips and Velveeta have that make the cheese sauce smooth. In fact, it has to much, enough that it can emulsify other cheeses without it. You can use half processed cheese, half good cheese to make a sauce.
