I was at a cars and coffee with a track and this thing kept up with a GT3 RS. I was really REALLY surprised it kept up. Could be be the drivers could be the track, but I thought that was one of the most insane things I've seen on a track

The GT500 is not illegal in Europe. It is only not officially sold here. Which mean that if you really want to own one you can just import it from the USA.
I remember back in forza horizon 3 I tuned the GT350 to be a drag god at the old airport there was only a few select cars that could beat it. I was actually disappointed when I went in to forza horizon 4 for the first time to see that they nerfed the mustang. I hope these mustangs will redeem their predecessors.
