Thanks for that info about a “free stone” variety. I didn’t know that. I preserved some peaches a little while ago and it was so difficult and they looked so bad. I have just check the other varieties I’ve ordered and they are “free stone”. Fingers crossed they will be a bit easier.
What if I want to use smaller jars for the BBQ sauce as we don't use a lot at 1 time? Don't want to waist any after opening a jar. Is it the same processing time?

How long does it keep if not canned? Thank you. I am not sure how long to can in Australia
If you aren't canning these recipes, I'd treat as leftovers, keep in fridge and eat within a week :)

Absolutely! You can always go smaller. The processing time would remain the same ☺️
