sudo apt update updates list of all packages and version sudo apt upgrade upgrades programs according to list generated by apt update. so you should update first and then upgrade. It is not compulsory to update/upgrade your system. your packages/system should run fine even without upgrades.
as a beginner , you dont need to type commands for everything . there are nice apps preinstalled for installing, updating, upgrading, basically everything
To some extent yes, but command are foundation, if anyone work on server, accessing system from SSH or other platform, using raspberry. command are compulsory.
