  • This is what I do with my brisket trimmings. You will end up with about 20-30% of trimmings when you try to shape your brisket in a way that it will cook the best.. That's a lot of meat & fat to just discard.

    I bought a brisket from Costco today for $3.99 a pound. I trimmed it put a little yellow mustard on it and some dry rub. It was 17 pounds before the trim. It's probably closer to 11 pounds now. I have a weber kettle 22 inch. My first brisket experiment. It was just a flat. It was the biggest they had at Sam's Club. I did not know that you need the fat cap to make it tender. The flavor was amazing but it wasn't tender and moist enough. I put it in the crockpot with some beef broth and some beer and potatoes. It came out great.
    I cut off about 3 pounds of the flat. I will put that in the freezer for now and when I cook it it will go on the slow cooker. As for the rest of the beef that I trend maybe I'llmake a soup with that. I'll make tallow with the fat. Nice video.

    great information, but you could use a little improvement in the audio volumes, the music is too loud and your voice is too quiet. i need to adjust my volume all video. perhaps a microphone would be a good investment. otherwise very good information! thank you

      Thanks for the suggestion, Dave. I agree with you. We have gotten a microphone recently and I really like the results. Please check our latest video on the 250 update to see the difference in sound quality. Appreciate you stopping by. Cheers

    Do you also grind the grey pasteurized meat from the brisket? It always seems so unappealing to me, but if it's usable then I'll have to get over it, ha.

      I normally don't, but I have cooked those and they are fine to leave on.

    Can you just put it in the air fryer to crisp up the fat to eat?

    • @fikscue
      @fikscue  2 ปีที่แล้ว

      I never tried it but I suppose you can. The fat just needs to be heated up at a certain temp where it breaks down into liquid (tallow) and solid (crisps). Thanks for stopping by!

    Lol volume is really low ....also you used that sharpener the opposite way, which is the most dangerous. Blade gets run on the outside so that finger guard has a chance to protect you from being cut
