Also I just recently made Mike's baking powder biscuits (I've never been a fan of baking powder or all purpose flour - i've used self rising all my cooking life) and i have to say I have now become an AP Flour older lady. Mike's recipe makes a really good biscuit! I still prefer my SR Flour & Buttermilk biscuits but I'm learning to cook with what I have in hand & for now that's AP Flour & baking powder & salt! My buttermilk biscuit recipe has 1 Tbsp of baking powder, but also adds 1/2 tsp of baking soda. The soda reacts with the acid of the buttermilk, creating even more lift.
I love biscuits but they are fattening and jack up my blood sugar. I will eat half a biscuit. I wish I could indulge. Does anyone else love sausage gravy poured over the biscuit? Yum.
