Very interesting and plainly explained. It looks really tasty although I'm not familiar with things like cumin ( but I'm sure I've tasted it in Indian restaurant curries - which I love ). Is it possible to cut down on the use of oil and cut out salt altogether though ( whilst retaining a nice flavour ) to help make it more healthy ?

Instead of ginger garlic paste, just use ginger ang garlic
