Why did you not turn your cab 90 degrees so it would be easier to access the drain plug? As well you could retract your boom swing cylinder to get the fluid out of that as well. I have the exact excavator as well with a thumb
If I remember correctly, when I recorded this video there was something else in this shop and it would not have given me the room. But yes, rotating the cab would make it easier. I believe there was an RV in between the 2nd and 3rd bays and I wouldn't have had the room. And the RV would not start to move it forward more. Yes. you want to retract as many cylinders as possible for a drain. In this case, the swing and blade cylinders were actually taken off to be resealed, so I was not too worried about those being empty. But all very good points.
I actually went to my local cat dealer that does mostly rentals and asked the service department to print the areas I needed like flush and fill procedure, etc. I love caterpillar service.

I have the same machine the blade & cab rotation work fine but no travel, no swing arm, slow bucket curl & boom where should I start lol?

Change all filters, if that doesn't fix it it could be your hydraulic pump or control valve. Employ a fitter.
I would just setup a siphon to get rid of the bulk of the oil. Don't even need a pump.
