    My grandfather came from America Samoa and started a new life in Hawaii with my grandmother. He brought his traditions along with him. Taught his sons (my dad's the youngest) how to make an umu and how to cook certain dishes. My grandfather passed away before I was born and the traditions died with him in the family. I wish I knew how to speak the language and learn the traditions of my Samoan culture. I feel disconnected from the culture even though I am part Samoan. Watching this made me happy.     We use rocks volcanic rocks are the best for umu in Samoa keeps the heat in longer and doing a Samoan Umu is the best and fast way of cooking food especially a whole pig 😃

    the pigs stomach was facing the ground, when they took out the leaves there stomach was facing up. are these two different umus?

      The best face down, little longer stronger wire bottom sitting on raw lapalapa coconut ones, both sides and top doesn't touch the pork, little rocks around wire make that golden crunch color, never seen any black marks on it's whole body, make nice and clean the whole world watching ❤❤❤

    we use either river stones or volcanic stones,they both cook the same way. im sure if your a pig too cooked the same way youll turn out the same depent if youre fat or skinny🐷🐖🐷🐖

    30 min cooking time kase maliit yung baboy at marami Ang batong ginawa nila. Sa lechon natin halos isang iras yang liit na yan. Ang gamit nila river stone Hindi lava rock. Yung lava rock may butas butas pag nainitan puputok. Yan Ang daming BATO for a maybe 15to 20lbs na biik

    I remember my family would put taro, sweet potatoes, cabbages, yams, Bread fruit, fish, and other seafood on that umu...on a sunday....and after church everything is cooked

    Because it was steamed..the skin is not crispy.

      If the rocks are hot enough it does make the skin crisp. But in the umu it's more important for the inside of the pig to be fully cooked.

      Actually is not raw,, it is not part of the Lechon because I ask the people who made on the next day and they said it is ham..
