It's hard to say because each day is different. There's been days where we've waited 8-10 hours and saw absolutely nothing, then there's days where you can get many passes. You just never know! Every time we go, we have no idea if anything is going to fly, so we just spend several days at a time and wait and hope :)
I live in orange county but drive up to the Sierra's pretty frequently going up hwy 395. I love seeing the military jets flying over our heads. But like you said you can see them one day but then can go a few days or a long time without seeing them at all. When I asked that question I was pretty sure that was the going to be the answer but crossed my fingers and toes just in case you had some inside information lol
