We just finished our tomato canning. 175lbs worth. We make canned tomato's, sauce, juice, and paste. I use Romas and San Marzano for sauces and paste and juice. (hint) My wife and i find it easier to use latex gloves when peeling. The rest of vegetables are not ready yet for canning. You ever try saving the skins and drying them then grind into a powder? Great video.
I have so enjoyed getting more time with you this month! Your hard work is greatly appreciated! I would love to see you make more pressure canned "ready meals" to store.
I am new to the channel due to the three Rivers Challenge. I’m not a homesteader or gardener but hope to plant some winter plants in my new Greenstalk. Keep your fingers crossed at 75 it’s kinda tough sometimes. I very much enjoyed your channel and am subscribed.

Nothing like beautiful fresh flowers bookending your preserves. Lovely. Not only is your challenge month over, but we are knocking on September's door! That spaghetti sauce is the one I used to make, it is all that good! I made alternating batches with Italian sausage also. Really tasty! Always added fresh basil when using, it gave the sauce that quintessential homemade flavor. Haven't heard from you lately and I hope you are good! Until our next visit.. all my best wishes. ❤ Momma G

If you use an immersion blender you don't need to take the skin away. If something got in the skin it also got into the flesh of the veggie You can also freeze them this way the sking can be taking off easily. Since you have a freeze dryer, you can do some powder with the tomatoe skins The celery leaves are do good in soups and stews. To get a little spicy taste in my spaghetti sauce, i add 2-3 italian sausages the spicy one
I was the same way. I was super nervous before I started canning too. I have an American canner just like yours . I was rather intimidated but once you get finished, it is so easy and the intimidation was gone. I love canning and I can’t wait to can something else. I have canned tomatoes this year, now want to can spaghetti sauce.

@modernhomesteadalaska we haven't done roasted salsa but we have put the tomatoes, peppers, & onions on our smoker and made "smoked salsa". It's amazing!
I just subscribed. I was looking for canning channel. I am a canner but love to see what others can and see how it is done if it is something I have not tried. I had a quart jar of blackberry pie filling break in my canner. What a mess that was. I am getting ready to to chicken broth, chicken and applesauce this next month.
I think kix is the cereal you where talking about and they still make it, I've canned all my life learned from mother and jars always need to be washed just in case you don't want anything on the outside touching your food on the inside when you empty your jar God bless

HINT: canners put a big splash of white vinegar in the water. It keeps the jars clean, they say. Probably neutralizes any smells, too. LOL.... I've only canned one jar of green beans with carrots. It looked so cute it actually won the Best in Show ribbon at the County Fair & a $25 prize. Someone dared me for an entry as a goof. City girl here. No garden.
Oh I use to can tomatoes! I am having flashbacks! I taught full time and the majority of our tomatoes would be ready to can over Labor day weekend. I made tomato sauce, tomato juice, stewed tomatoes, tomatoes and peppers ( some sweet and some hot) tomato jelly and one year ketchup. I canned enough to get us through an entire year! Every year I vowed never again but, I did it all over again! It saved us so much money.
I have the presto elec n presto stove top. the stove was my son inlaws n when he moved said you want this or u can donate. week or so later saw in garage n told my hubby omg thatsvwhat I been saving for. then bout 2yrs later I saw there was elec ones n had my son order me one off Amazon n they were on sale win win. usually just do electric one except when big batches n harvest but the heat k8lled EVERYTHING so I been buying l8l bits here n there n canning
I have inherited an American canner and it looks a lot like yours. Although I am pretty sure that mine is close to older than dirt. How can I make sure it’s safe to use without destroying our rental kitchen???
@@veronicavatter6436 I’ll give that a try. I wasn’t sure if they still did that kind of thing anymore. I know they used to. The outside of the canner looks pretty beat up but area where the lid meets the base is still smooth.
I find only the green bell peppers turn bitter. Try the red, yellow or orange bell peppers. I actually find this is true of any cooking. I think it's because a green bell pepper isn't actually a ripe pepper so isn't as sweet as a coloured pepper. Which is why the coloured peppers are so good raw, not so much for the green.

I used to make my sauce like you. But now I just wash them, core them , cut in fourths and place around on a lg deep cookie sheet; add on onion chunks and some chopped garlic. Sprinkle on all my spices, and some olive oil. Then roast them. Then into a big pot and use the immersion blender. Cook til thickened. Can or freeze. I add the meat after. So easy and my old hands don’t hurt after.

I know you make jalapeño salt. Do you ever make pickled jalapeños? I use them on everything tacos, nachos, breakfast burritos, pizza, burgers, brats etc…lol
I preserved tomato sauce before, but I just preserved the base. The tomatoes with all my spices. This way when I used it, I then sauteed my onions and peppers and browned my beef with the tomato paste, to add to my base sauce.

Years and years ago, before I was born, my mother made a big bag out of an old curtain sheer. She would put tomatoes in the bag and then put the bag into the pot of boiling water to scald the tomatoes. It was so easy to move a large quantity of tomatoes at once.

CHOCOLATE ORANGE ZUCCHINI CAKE Favorite Recipes of the Sutton Families & Friends Ingredients: 2 1/2 cups flour (unsifted) 1 1/2 tsp. baking soda 1/2 cup cocoa 2 1/2 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 3/4 cup soft butter 2 cups sugar 3 eggs 2 tsp. vanilla 2 tsp. grated orange rind 2 cups coarsely shredded zucchini 1/2 cup milk 1 cup chopped pecans or walnuts Recipe instructions: Preheat oven to 350 degrees. Combine flour, cocoa, baking, powder, baking soda, salt, and cinnamon. Set aside. With mixer beat together the butter and sugar until they are smoothly blended. Add the eggs; one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel, and zucchini. Alternately stir dry ingredients and the milk into zucchini mixture, including the nuts as a last addition. Pour into a greased & floured 10 inch tube pan or Bundt pan. Bake in oven at 350 degrees for about 1 hour or until wooden pick inserted in center comes out clean. Cool in pan 15 minutes. Turn out on wire rack to cool thoroughly. Drizzle glaze over top. Cut into thin slices to serve. GLAZE: Mix together 2 cups powdered sugar, 3 Tbsp. milk and 1 tsp. vanilla; beat until smooth. I like to replace a tablespoon of the milk with 1 Tbsp. orange juice.
The Roma tomatoes are cheaper at Walmart than the farmers markets here and so much better .98 cents a pound tomatoes at the farmers market are 1.00 per tomato and not ripe 42-50$ a box of 25 lbs there , I’ll never pay that
The tomatoes at Wal mart are nasty this year. They look delicious but you slice them and the have a large hard yellow core. I don't live near any farmers markets either.

You can take it to your local county extension office.

Yes look it up someplace through the extension office will know where to get it tested! And DOOOOO GET IT TESTED IF YOU ARE NOT 1000% sure it’s safe!

1/2 cup cocoa
2 1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp. vanilla
2 tsp. grated orange rind
2 cups coarsely shredded zucchini
1/2 cup milk
1 cup chopped pecans or walnuts
Recipe instructions: Preheat oven to 350 degrees. Combine flour, cocoa, baking, powder, baking soda, salt, and cinnamon. Set aside. With mixer beat together the butter and sugar until they are smoothly blended. Add the eggs; one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel, and zucchini. Alternately stir dry ingredients and the milk into zucchini mixture, including the nuts as a last addition. Pour into a greased & floured 10 inch tube pan or Bundt pan. Bake in oven at 350 degrees for about 1 hour or until wooden pick inserted in center comes out clean. Cool in pan 15 minutes. Turn out on wire rack to cool thoroughly. Drizzle glaze over top. Cut into thin slices to serve. GLAZE: Mix together 2 cups powdered sugar, 3 Tbsp. milk and 1 tsp. vanilla; beat until smooth. I like to replace a tablespoon of the milk with 1 Tbsp. orange juice.

When I still had a garden and canned, I would do all peeled whole tomatoes and that way I could use them in more ways.

Did you know that you could take the tomato seeds and peeling and freeze dry it and use it like a tomato powder and it works wonderful
Yes! I just had some sort of wax off the store ones, I don’t want to preserve the chemicals if I can help it but my home grown I will
The Roma tomatoes are cheaper at Walmart than the farmers markets here and so much better .98 cents a pound tomatoes at the farmers market are 1.00 per tomato and not ripe 42-50$ a box of 25 lbs there , I’ll never pay that

No not at all
The tomatoes at Wal mart are nasty this year. They look delicious but you slice them and the have a large hard yellow core. I don't live near any farmers markets either.
