I prefer to use a serrated peeler with citrus since it does not take any pith with it.
This of course means that is too thin to express, but since the underside is wet with the citrus oils you get more flavor.
Otoh, it is difficult to make pretty.

Thanks for the video! question, do you have any tip on how to pick the best orange to express more oils? i mean, most of the oranges i buy trend to not express enough when i try (unless im doing it wrong everytime) and the peel doesn't look / feel as thick as yours (im using a peeler, just like you, maybe i need to push a bit harder?) thanks again for the video!
