You may have missed an important step. Take the sticker off the fruit. I kid you not I have had an old fashioned with the label still on the orange peel 😂
I prefer to use a serrated peeler with citrus since it does not take any pith with it. This of course means that is too thin to express, but since the underside is wet with the citrus oils you get more flavor. Otoh, it is difficult to make pretty.
