    If you have lactose problems, there is no good reason why gelato (which is made with whole milk) and heavy cream should bother you either because they both contain lactose, which is milk sugar. It is likely that you are not lactose intolerant, but allergic to some other foreign ingredient that is either contained in the commercially produced milk or some artificial ingredient that is added for processing that they don't have to list on the label. Try drinking a local milk or an organic milk.

    I just told my hubby yesterday I want an ice cream maker because my daughter and I would have fun with it. And here you come with this recipe!! I LOVE this!!!     I have been making this for a couple months now and we love it. I have done white chocolate strawberry, vanilla, peach and cappacino orange mocha. I am having a blast making all kinds of flavors. Your tutorial is the best I have seen for this recipe.
    Careful though it is addicting......

    You are good...I am exited to try this. My favorite parts of your method is that there are simple ingredients and no expensive, overly priced ice cream churner involved and yet the ice cream comes out to a very smoothe and almost perfect consistency. Thank you.

    Noreen, Thank you for this recipe. I have wanted to make homemade ice cream for some time now and really couldn't afford a machine. I ended up making homemade mint chocolate chip. I added green food coloring and mint extract and chips. I just got done putting in the freezer and can't wait to try tomorrow. I wasn't sure on the amount of mint extract to use because how strong it is. I ended up using 1 1/2 tablespoons and it wasn't to strong. Keep all these great recipes coming.

    I only have one cookbook. If you see one that is "no longer available" that was the mistake I made when first uploading to Lulu. As for a cookbook for these summer treats.     So I tried this yesterday and here's my review: it's very thick and rich. Extremely creamy and very sweet. I may only use 2/3 of the condense milk next time to cut the sweetness. Overall taste is delicious. It taste just like vanilla ice cream just on the sweet and rich side.

      Sadly adjusting this very specific recipe will not render you a less sweet product. I will only make the recipe not work. There is a reason for the measurements as written and that is because they are true and successful. I promise that leaving out 1/3 of a can of condensed milk will only give you a chalky, hard mass that will not be pleasant to eat. This is not really ice cream, but Gelato, and the condensed milk is what makes it a no churn product. You can make regular ice cream in an ice cream maker with just a cooked custard and cream. That is what I was doing an alternative too.

      Sounds good to me! And Noreen, I just went to the store and bought the ingredients and made absolutely sure that the sweetened condensed milk had only milk and sugar as ingredients. Beware the VERY evil high frustose corn syrup, everyone! :)

    I wanted to make homemade ice cream but didn't have a machine. I came to your channel- like I always do for inspiration... Since I didn't have vanilla bean 😂 I puréed a pound of strawberries instead. It was amazing!!!! Thanks again for always being there for me! PS --- I can't stop eating this ice cream! 🍦🍨

    im surprised the texture is so smooth i have made ice cream in an ice cream maker but after i put it in the freezer like it says in the recipe book my ice cream is like a rock and never really softens just melts!

    The sweetened condensed milk is what makes this "no churn" There is no substitute for it. I thought is was just right for me. There isn't really another ingredient that will mimic the "custard" mixture of the semi fredo so you might try making an actual semi fredo, however they are sweet as well.

    Noreen, I made this last night and could not wait to taste it this morning!! It is absolutely the creamiest ice cream i have ever had! I was so excited! The only thing is that it's way too sweet! I was wondering if there's a way to make it less sweet? Add more cream and 1/2 the condensed milk? Please advice! I can't wait to make it with strawberry and other fruits!! Thanks so much!!

    You can try anything you want to! Like I said, the sweetened condensed milk is what makes this a no churn recipe. I don't know of any other substitute for sweetened condensed milk. Unfortunately this may be a recipe you won't be able to make based on your dietary preferences.

    noreen what did you add to make it chocolate? i am lactose intolerant but gelato and whipped cream doesn't bother me so this is a godsend for me to have ice cream. please make other flavors especially teach me how to do strawberry. i love love love your videos

      Welcome! Glad to have you here! Yes, you can use just a scraped vanilla bean. You can use whatever is your preference. I would only use one. Plenty of flavor there.

    Irish Prepper, try Marks and Spencers double cream, it is really think already, and doesn't take much whipping to get to stiff peak point. Also, I am going to try this and put it in a round cake pan, and bake a cake in another round pan, and try to do an ice cream cake!!! Love this!!! Xx

    I buy whichever is cheapest. I don't believe you can purchase the Tahitian ones right now If memory serves, there is some type of shortage or crop problem. If they are kept properly they will last a very long time.

    How do I make the chocolate, the someway, but what do I use for the chocolate flavor? I try to make everything I can homemade, this way I know whats in it. Thank you for sharing your recipes, I learned a lot and saved money :) from them.

    I only ever buy the grade B beans because they are extract grade. No reason to spend the extra money. Just like Maple syrup, b grad is better for cooking and is most likely more flavorful. I store mine two ways, first is in a vacuum sealed bag inside a ziplock bag inside another ziplock bag. Second way is inside a two quart mason jar sealed up tight.

    OK, here is my question for you, you said in your video that you think every sweet thing needs a pinch of salt. Do you think the reverse is true, or can it be reduced; to not mess with the original intent of the recipe. I know it plays its part but when its not needed do you go ahead with it, personaly?

    I have addressed this question a couple times in the comments. There is no substitute for the Sweetened Condensed milk. Semi Fredo, by nature is sweet and is different from ice cream. Unfortunately there is no way to adjust this recipe without having ice crystals form and having it turn into a giant milky ice pop. Not what we are going for here. Adding more cream and reducing the SC milk will not give you the desired result. You can however achieve a no sugar ice cream with a machine.

    No, you will need to use fresh cream. You have to use fresh whipping cream the artificial stuff won't work.

    Could you try making it without the SC milk? We are sugar free and don't eat anything canned. I love this idea for ice cream but wish there was a way to make it sugar free.
