    Ambil is the best example of healthy sambalpuri cuisine. There are varieties of Letha or Ambil in sambalpuri cuisine like - Ambil Letha , khada Letha , kulthi Letha and many more. But the basic and normal Letha prepared with rice batter and boiled vegitables only. For tangyness we used tamarind or dry mangoes instead of curd in traditional Letha.
    Basic Letha Recipes are similar in every corners of western Odisha but it's you can founds little differences according to locality and availability of vegitables. Boiled vegitables with flavours of curry leaves , tanginess of tamarind, dry mangoes and consistancy of rice batter makes the Letha more cravingful.
    Our sambalpuri marriages , temple bhoga , festival days and special occasions can't be completed without Ambil.
