I ferment my tops and dehydrate them on the lowest setting, to keep the ferment alive. I grind them to powder. I keep a shaker of assorted ferment powder mix on my table and use it like I would salt. There's no taste or smell for most things, because it doesn't rehydrate until it's well past taste buds. Healthy fermented food, anyone can eat.
I dehydrate the tops and store them with my dehydrated kale. I am going to make a powder out of them soon. This video was perfect for me today. I sliced up 4 pounds of strawberries this morning. I did not know that there was a mushroom slicer, it's now in my amazon cart! I do not condition them though, I eat them faster than fresh strawberries. :)

I just sliced up strawberries this morning on a cutting board exactly like yours lol! I put the leaves in the compost. Thought about making vinegar but I tossed them. I’m headed to the store for more strawberries to make strawberry lemonade, so I’ll use the tops this time. Costco has some beautiful huge strawberries! I just did this with lemon rinds. It makes a great cleaner!

Just made a bunch of fermented hot sauce from my garden with Jalapenos, roasted poblano and smoked paprika peppers, along with garlic and onions. After straining into bottles I dehydrated the leftover "gunk" lol, and now I have a very flavorful seasoning. I've only had my cosorsi for about 2 weeks but I'm loving it and all your vids. My only problem has been using it in my garage in Houston with high humidity so it takes a long long long time to dehydrate.

I like the shrub idea, but am curious if you could make vinegar out of the scraps. I think some people to make peach and pineapple scrap vinegar.
I bought some strawberries a few weeks back that were horrible an had no flavor so I sliced them up an put them on a very low heat on a sheet pan in the oven after about 6 hrs they were so yummy. Ate the rest of them they sweetened up with their own sugars....

😮. I made the strawberry infused vinegar but I so wish I’d seen the simple syrup first, lol. I would definitely use that in my homemade yogurt. Probably faster than I’ll use the vinegar. Oh well, next time! 😉

To store the DH strawberries, tou say that we should not vacuum seal at all, put a moisture absorber in instead? I was vacuum sealing them. @ThePurposefulPantry I wouldn't necessarily want to eat them as is, because they aren't exactly fresh anymore (kind of like a head start drying out, but they might work okay in these applications.

I wonder if I make strawberry infused apple cider vinegar if it will help with the awful taste of acv. I'm trying to take acv to help with my overall health and it is hard to choke it down in the morning even though it is diluted, 1 tablespoon in a glass of pineapple juice, it is hard to do.
I can't say since I haven't tried, but I know the regular vinegar is still somewhat 'tart' even after a few days, but not as much. Do a small experiment and see what you think!

Oh Darcy, don't shoot me, I did my strawberries yesterday and oops, I threw all of my tops out. Oh well, a day late, but now I have a reason to buy more.
Question ... Why are you even cutting the tops off? I've seen people do this but still don't understand why. I was taught how to "hull" them using a paring knife or hulling tool. This allows you to remove the leaves and that tough little piece just beneath it. No waste to worry about.

Using them to make vinegar is a good thing, but until literally, a few days ago, I have never, in 56 years, seen anyone cut the top off a strawberry like that. It is such a waste! You use the correct knife and take the greens and core out at the same time. Even in restaurants-my daddy was a chef.
See - I knew someone would complain. I said, specifically, that I wasn't worrying about trying to cut well because I would do extra things with them. You saw - if you watched - that I showed the correct way to do it with a huller (not everyone likes using knives) to keep it to the greens/core.

Moisture absorbers are best. You can vacuum seal, but moisture absorbers work best for fruit.

DOn't leave it on the counter - put it in the fridge, and no I don't strain.
I always run a straw from the bottom to the top to get the greens off
I used to, and I just prefer the huller method instead. It's just easier if I'm trying to do nothing but get the greens.

if you had a hot sterilized jar with the canning lids and flipped that syrup upside down, would it seal like jelly and jam would?
no, and that is also no longer an approved method for jams/jellies.

Can you make the syrup with honey instead?
Yes, but you need more honey (2.5 to 1) in the ratio than what a simple syrup is (1:1) Google for directions.
In your strawberry syrup can I use 1/2 cup of sugar? I don't want it to be too sweet.
It would no longer be considered a simple syrup, but yes, you can.

It's syrup, of course you can. You need to thicken it up by using more sugar or simmering it for awhile.

I cap them and use the whole strawberry I never cut just the tops that waste half the strawberry to me

As you get a few strawberries at a time, you can freeze the tops and collect to create more things!
