I understand that it's simply not logistically possible to use pestle and mortar in professional kitchens... But don't you think the major disadvantage of blender/grinders is that they 'heat up' the ingredients and reduce the flavours greatly. I particularly feel this while prepping the spice mix for Chicken Cafreal (a Goan dish). There's virtually no freshness & moisture left from the Coriander leaves afterwards, which is a key ingredient for the dish's flavour profile.

@@mjb7015: Yes it is. Especially, if you end up smashing (double chopping, sideways) things like coriander, basil, spring onions etc... they are easy to ruin, TBH. P.S. However, when I cook Indian (especially ‘Bengali’ dishes like fish/chicken/chevon curry), I personally prefer adding the chopped corianders a couple of minutes ‘before’ turning off the heat, and fold them in… to help infuse the full flavour. It works better than having a mouthfeel of ‘raw’ coriander leaves (and therefore ending up feeling like a Chevon myself… in my personal opinion).

What a excellent collaboration! Vincenzo is one of my favorite chefs to watch on TH-cam, so this was great. Also, I'm about as white as it's possible for a person to be, and even I don't own a garlic crusher.
Guys please do more! thank you very much for the collab!! you are my two most favorite chefs from which I not only enjoy the reactions but actually follow your cooking advice and recipes!
Man, even though I've watched the Uncle Roger thai red curry video 2 times before (first his reaction and then James's reaction to his video), this still was a fun video. We need more collabs of you two, I'd really like seeing you guys reacting to Jamie's butter chicken... Or anything, really. Haha
I very much enjoyed your first video collaboration and wish you both that it is the beginning of a synergy that benefits you both. What I particularly liked is that your video allowed you both to shine. Vincenzo - in my eyes you contributed an elegant, humorous seriousness; you showed your genuine interest in understanding the criticisms without blindly jumping on the general bandwagon of disregard of Jamie Oliver's presentation. James - you were able to let your knowledge and the fruits of your experience shine and tried to give substance to your criticism by answering Vincenzo's interested questions knowledgeably and accurately - always of course with your mischievous smile, which gives the presentation of your knowledge even more power and yet lightness. Another positive for me was the fact that although you chose Uncle Roger as the starting point for your video, you didn't give him too much space other than a few laughs. That was very refreshing for me. Not reacting didn't diminish his comedic talent, but it did put it into perspective. I really hope that you two continue to work together and please don't lose that wonderful balance between smiling, curious seriousness and excellent knowledge of everything that falls into the broader area of "cooking" - presented with a smirk. Two thumbs up and please keep it up. I'm a fan. Will post this on Vicenzo‘s channel, too

Why don’t you guys meet here make it a semi- public event so your fans can come and see you? We have a culinary Institute, not too far - up in the Napa Valley … but that’s probably one step too far ahead, huh? 😅✌️
Please do more videos together. You are literally my two favorite food youtubers!
more to come!
Of all the guys connected to Uncle Roger, these two are my personal favorites. More collaboration vids please
Two of My Favorite TH-cam Chefs reviewing Uncle Roger and Jamie Oliver? Yes! Bellisimo! Please do more collaborations!
What a great surprise! What a great collaboration! You 2 made my day 😄
Now you need to paz Vincenzo back by making a collaboration on his channel 😉
I'm so glad to hear!
Definitely a good collaboration video. I laughed a few times way too hard. I really love how I was able to tell that you both tried so hard to hold back and not be too hard on Jamie, lol.
Glad you enjoyed it!
Haven't read the other comments, and obviously can't speak for others, but these kinds of colabs are almost always fantastic, and I reckon others feel the same. We like your approach and energy, and we like Vincenzo's approach and energy, and to see you bouncing off each other is where it's at. Your content on its own is wonderful, and the colabs absolutely add to that wonderfulness.
Thank you!! :)
I love the collaboration. Love the video.
Thanks so much!
Lol, good fun video Chef( as usual). It would be interesting to see a vid reviewing old school chefs, like Pepin, Yan, Smith and such. Vincenzo was a cool co-host. Have a good day Chef.
What a charming collaboration! Not just reactions, but also informative. I hope you do more!
yes we will!
Would love to see more videos in collaboration with Vincenzo!
soon! :)
Giving standing ovation for this video! My two mostest favoritest, Chef James and Vincenzo collaborating on a roast of Jamie Oliver by Uncle Roger! Epic! Priceless! 👏👏👏
It's about the time I go to bed and I was feeling sleepy already, but then I saw this video and I'm refreshed af
The time zones between Spain and Australia must be something for you guys to do this collaboration
What a excellent collaboration! Vincenzo is one of my favorite chefs to watch on TH-cam, so this was great. Also, I'm about as white as it's possible for a person to be, and even I don't own a garlic crusher.
Nice collab .... really love both of you :)
Guys please do more! thank you very much for the collab!! you are my two most favorite chefs from which I not only enjoy the reactions but actually follow your cooking advice and recipes!
More to come! Vincenzo will post his video soon!
This combination insanely cazy!!! Do more!!!! 🎉😂
Man, even though I've watched the Uncle Roger thai red curry video 2 times before (first his reaction and then James's reaction to his video), this still was a fun video.
We need more collabs of you two, I'd really like seeing you guys reacting to Jamie's butter chicken... Or anything, really. Haha
How I missed this until now, I don't know. This was great. I hope you do more, and with others as well.
James and Vincenzo my 2 all time favourite chefs ⭐️
2 great guys found each other 👏🏻
Bon app from 🇨🇭
Two of the true keepers of the good taste in food on YT!! This was SO much needed!!!
Pailin’s channel is a MUST to watch for any Thai recipes!
How lovely that you are both watching together. Interesting facts from Vincenzo and more to the point great to get views from two chefs. Thank you!!
I would love to see you colab with Vincenzo. I enjoy watching both of yours and Vincenzo's channels.
Great seeing both of you collaborating! Keep it up guys - big fan!
Thanks so much!
What a fun colab! Great to see you both!
Oh this video is FRESH! I love this collaboration! Please keep more coming! Grazie and Ciao ~
I'm a fan.
Will post this on Vicenzo‘s channel, too
thank you for such a nice comment! :)
I love these vincenzo collaborations keep doing this if you can
I look forward to the day you'd do together an in-person cooking collab in Australia and/or in Spain.
Gentlemen, you have just made my day. My three favorite reviewers in one video. Thank you so much for this collaboration.
Loved this :D You guys will hopefully do more reviews in the future :) It was fun to watch.
That was a Fabulous Co-lab! Very entertaining. Thanks James!
Glad you enjoyed it!
