Hi, is there a way that instead of copy the created document it will move the file to Azure Blob and just leave the reference on the sharepoint side? This to have the storage be in Azure and not in Sharepoint. Becuase if I use this flow, it will use storage on sharepoint and also Azure Blob, right?
This video covers the copy documents process only. It is a good idea though, I will make a video on how to Sync SharePoint documents with Azure Storage, probably this week.

Does this keep a folder structure if you choose to move data older that 10 years for example ? I'd like to keep folder structure....
I have not tried it but I think I will keep the folder structure even if you are not migrating any older files.

You can create PowerShell scripts and run them under Azure automation (runbook) to copy SharePoint files to azure storage.

Yes, you can. I have not tried it though.
Can we also copy the meta data of the documents (custom column information) from Sharepoint to Azure blob storage ?
You can create a CSV file via flow to store metadata in Azure Blob.

Check the file side limit on your Office 365 tenant. By default it is 250 GB
