If you cut off the beet tops and the roots they will bleed some of the beet juice out in the pot when boiling and you lose some of that delicious beet juice , we don't reuse the beet water after boiling them because it taste bad . if we're pickling them we start with fresh water to make the pickling brine thanks for watching 👍

Water bath not presure

Beets are low acid vegetables . Pressure Can them if not adding vinegar for acid to pickle them , Water Bath Can them if adding acid like vinegar to pickle them According to USDA Canning Guide 👍
