For the taxidermist he could be a guy who has killed and taxidermied every animal he legally can but he wants more and is now moved on to humans

The mannequin man could be a fashion designer who kills the people who mock his clothing ideas and turns the corpses into mannequins which he then uses to dress up in his clothing store (or make clothes of the people)
