Fallow Buck Stalking in the UK

Gamekeeper and master butcher Steve Wild takes us out on his managed estate for an evening Fallow culling. For many people, deer stalking is a recreational activity, but it is also necessary to protect agricultural crops and forestry and indeed, deer, since they are prolific breeders and, if numbers are allowed to increase unchecked, may become prey to starvation and disease.
The culling of deer should always take place as part of a deer management plan which considers both the welfare of the animals and the damage they may cause.

I hunt here in Canada, curious as to why you target the small bucks? If it’s for taste, I find (at least for whitetail) taste is all in how much care you take gutting; getting tarsal glands off fast and clean removal of piss sack.

In the UK we leave the bigger bucks with good genetics to keep breeding. We'll take them when they start to, "go back", pass their prime. Instead we take bucks we consider to be of poorer genetic quality. Plus, we have so many deer in the UK, and such long seasons to hunt them, with no limit on numbers, so we're not as focused on trophies as our NA cousins.

I've actually booked my first deer stalk. Just thinking though us humans will cull deer and manage other species. But we won't manage our own population?
