    A.K.A.: SWEET DUMPLINGS. you add anything you like, including sugar, to an easy dumpling recipe and boil rounded heaping tablespoons of the dough for about 15-20 minutes. that is a light rolling boil where the top of the surface water is still moving. loose cover, otherwise it will boil out of your pot. no eggs needed for a dumpling mix. my grandkids love the dumplings in their soups. but if you overcook them, they become hard like a rock, especially if your dough has too much flour in it. not enough flour causes them to fall apart in the water. did you know that bagels are also boiled? then i believe they are put in an oven for a short time to make them tan color and to have coatings of your desired flavors stick to the bagel, like honey with sprinkled sesame seeds on top of the honey etc.

    This makes me think that maybe a kitchen cleaning of utensils and pots, pan ect from the 1800s video would be interesting.

      ​@@andrewlavoie6034 if they didn't immediately just rinse them off or wipe them down with water and a towel after cooking. Washing with soap would've been a little (not entirely) more difficult

    I would have not considered the concerns about cooking would be womens dresses catching on fire 🔥 but that makes sense once you consider the era’s clothing plus the weight of the tools. The other thing I did not consider was most cooking took most of the day just to prepare.

      peeling vegetables on a large scale takes a couple of hours sometimes. but ill make slices of any kinds of meats or just leave it whole, and toss everything in the large pot of boiling water. sometimes the vegetables get added after 2 or 3 hours of boiling the meat, then add the carrots, onions, celery, and wait for another 45 minutes of boiling, then add the potatoes and continue boiling for the next 20 minutes. beef roasts take a long time to soften as well as crappy cuts of meat. one cook on yt boils her meat for up to 8 hours but ive gotten some nice fall apart melt in your mouth meat after 4 hours. adding salt is imperative in boiling soups. you also have to keep adding water to your soups while boilling due to loss of liquids. imagine if you had to go to a stream and carry your water from there if you didnt have a pump well nearby? youd have to make a cistern by making a large hole or wide depression in the ground, place a tarp in the empty hole to catch rain water, uncontaminated rain water or snow which can be melted down.

    I think we all miss seeing Ivy in the kitchen. John, please get her to visit and cook with you some more, frequently if possible.
    You can give her her own episodes to cook special desserts ... chocolate!

    When we moved to the suburbs, Mom planted several fruit trees. The best in my opinion was the 'Sour Cherry Tree'. Mom made the best cherry pies, jams and jellies from those cherries, I always got to lick the stir spoon after the cherries had been cooked with loads of sugar...😋

    I mean in this in the best way possible. I love falling asleep to these older episodes! Perfect videos to watch and drift off to in the best way. Seriously Love this channel in the day, and so nice to fall asleep to at night!

    Would love a video that covers canning using beeswax top layer, and wondering if they used 1\4 unripe fruits in their canning as natural pectin?

      My grandmother would take watermelon rines and make jelly and seal it with candel wax. Was pretty good to. What people have lost to modern covenants

    Mexican chocolate (like Abuelita or Ibarra brands) are nearly identical to the stuff you used in this video, plus they're a lot easier for folks to find. (A quick trip to one of the dozens of markets around here will yield plenty.)

    I have never heard of Salamander tool before. Probably seen it at historic parks but never heard it referred to it before.

    How do you clean your kitchen utensils like the wooden wisk?

      Boiling. That's how they always did it. Sometimes exposing to sunlight for UV sterlization. Same with dairy equipment.

      Keep in mind, they didn't know that what UV light was, or any of the basic mechanisms behind it. They just knew that the boiled instruments set to dry out in the sun were cleaner, and less prone to contamination. And it was common knowledge, even though they ascribed various reasons as to why it worked (usually related to "miasmas"). Amazing how this stuff gets discovered, and passed down through the generations. They also scrubbed stuff with salt, which acted as an antibacterial agent.

    Sparks my curiosity on trying different flours for boiled dumplings. Bean or nut flours? Use what you may have on hand. Add different broths and seasonings.

    She was such a little actress and so spot on everything sis it is so amazing to see her as this little girl and forget that she is now all grown up. How old was she at the time? I just said six but I probably am wrong.

    Hi steve ,looks yummy.! I would use ftira toasted and un top a bruschetta like topping. After toasting, I wouud rub it with garlic,then add on diced red tomatoes,diced mozzarella,some basil chopped and rucola. Spread some oil on top some salt and pepper. Drink is ok the original kinnie or shandy ftom farsons or just cold classic cisk beer!!! Let me know what you think about it

    how many cows and chickens did those folks have running around. seems most dishes are chuck full of butter and eggs. and you make small portions, they had large families and would have to make larger portions than you make. i take my hat off to those folks, so much work to just survive. oh yeah, i really enjoy your videos. so much effort and research. thanks so much.

    A difference I see between these two is that Townsend would use more time period cooking utensils that were used by people from the 18th century, Michael doesn't.

    Very young Ivy reminds me of me cooking with my dad when I was little I learn to kosher meat and make corn beef and roast beef and bread, although she did not teach me how to make the bread that was another person I like either yesterday on the chair I worked with my dad or a housekeeper.
