Interesting… small family cook, or single, it may work, but for larger amount I can’t see it being practical like a 36” griddle for example because on this you would, sometimes, only be able to cook right in the middle above the fire pot, with the temps being that much colder off to the side.
One of the benefits of a stand-alone griddle is supposed to be the nice even temps across. If you don’t need that, then this will work great! And so much cheaper too..
