Sugar - 1 ½ cups / 300 gms

Chef, my jam never gets this magical colour. Also I use Musraad variety of mangoes, may be that's the reason for the colour difference.

Thelma, The color of the Jam will depend on the Mangoes used, sugar or Jaggery used and the amount of time cooked. If you over cook the jam it will have a darker shade. Follow these tips and see the difference next time 😃

I guess since we had a lot of Mangoes in Goa they used to make Jam as they couldn't finish eating all the Mangoes during the season. Making Jam was a good way to enjoy mangoes for a longer period especially in the monsoons. 🙂

I tried with Alphonso mango pulp and it turned out disastrous. I am told you must use only Masurath mangoes and not alphonso
