The English name for ugwu leaves is pumpkin leaves. Yes you can substitute with spinach leaves though you won't get that exact "edikan ikong" taste when its being made with water leaves.
Chi, I thought u had to steam the water leaves a little bit to avoid excess water in the soup. That's how I used to cook mine. But this style is better too.
