Use a bread pan and put a cookie sheet over the top until its time to brown it up, then remove. You just want to trap the heat inside. (this may make more than one loaf if using a regular bread loaf pan so you may want to split it into two) ☺

@@theevickyb I honestly don't know about the cooking times, my best suggestion there would be to check it about half way through. I would preheat them so you get that nice crust. I believe the internal temp for bread is 190F so if you have a food thermometer you could temp it for doneness. Then just leave it in to brown until you are satisfied with the crust.

I made this two days ago, and it was wonderful. Huge fluffy loaf much better than the other no knead loafs I've done. I'm going to use the basic recipe and see. If I can make a fluffy cinnamon raisin loaf. Thanks for your guidance.
@@tinamynlakhani9157 A couple things that could cause that is the yeast not being fresh or the dough being too dry. Your flour can behave differently depending on the temperature or humidity where you live. If you test your yeast with a little sugar and warm water and it foams up, next time try adding just a little less flour.
