How to make KHAO SOI chicken (ข้าวซอย) & Khao Soi Paste - Thai Recipes

  • Today I will show you how to make khao soi chicken (ข้าวซอย) and its khao soi paste..
    I will show you the whole recipe, including how to make the khao soi paste, but you can also skip this part if you want, and buy a ready-to-use paste in any Asian store.
    Khao soi is a very popular Chiang Mai noodle soup, maybe even the most famous Chiang Mai food, actually. It's made of a delicious Thai curry paste, noodles, and meat (the meat can be any, but today I chose the chicken recipe).

      And as I mentioned, in case you don't find the ingredients for this paste just go to the nearest Asian store/market, you might have a chance to find it 🙂

    Nice. Got to try that soon. I am VERY picky with my Kao Soi and only found 2 really good places to buy it in Chiang Mai. There are so many different variations.

      Hi, for red Thai curry paste (and most red Thai paste in general), we use red dry chili.
      And for Thai green curry paste, we use fresh green chili (mostly for the color and smell)

    Ahh I really want to eat khao soi ... But being vegiteratian I can't.Wish thr was some veggi substitute of chiken....by the way Khao in Hindi means To Eat.

      Wow that's cool, khao in Thai means rice and your is to eat 🤩
      For vegetarian way, you can use soybean paste instead of shrimp paste, soy sauce instead of fish sauce. Add veggies like, mushroom, bamboo shoot, I think it will be great!

    Kao Soi with chicken

    Ingredients

    • Egg noodles

    For paste
    • Dried chili
    • Garlic
    • Shallot
    • Kaffir lime
    • Finger root
    • Curcuma
    • Lemongrass
    • Shrimp paste
    • Curry powder

    For Kao Soi soup
    • Coconut milk
    • Palm sugar
    • Stock or Water
    • Chicken drumstick

    For side dish
    • Crispy noodles
    • Shallot
    • Coriander
    • Spring onion
    • Lime
    • Pickled green cabbage
    • Chili oil

    Recipe

    How to prepare all the herbs:
    • Remove all skin of shallot, garlic and curcuma
    • Cut the curcuma into small to medium size and thinly slice lemongrass (that will make it easier to pound)
    • For kaffir lime we will use only the skin. Cut it into small to medium size as well
    • You can also cut dried chili and finger root to small pieces too, that will help you not to use a lot of energy (I guess…)

    How to make the paste:
    • After prepared all the herbs, be ready to pound it in the mortar
    • Try not to put everything in the same time, do it little by little
    • Pound it well… exercise your arm… and take your time
    • Then you will have a nice paste with some texture

    How to make Kao Soi soup:
    • Boil coconut milk after that add your paste and curry powder then mix it well
    • Once you can smell herbs add chicken, coconut milk, some water or stock if you prefer and palm sugar. Then let the chicken cook for 20-30 minutes

    How to prepare side dish:
    • Add oil in the pan on medium heat and don’t let oil too hot before adding noodles, fry it until its turns to a little bit brown color
    • Thinly slice shallot and roughly slice coriander, spring onion and pickled green cabbage
    • Cut lime into 3-4 parts

    How to boil noodles for Kao Soi soup:
    • Remove flour in your noodles as much as you can
    • Boil water on medium to high heat then add your noodles. Keep your eyes on it, 2-3 minutes once its cooked remove it into cold water then rinse it

    How to do the final touch of Kao Soi:
    • Add noodles in the bowl then add some Kao Soi soup with chicken
    • Sprinkle some coriander and spring onion
    • On top, add crispy noodles
    • Place all side dish… beside your dish
