    Loe GARLIC Infused Oil. Just a great extra to have in the kitchen. These infused oils make a GREAT Gift, buying them in the stores is crazeeeee expensive. Thanks for the share

      🗝🤗 It's a Imported Italian Sparkling soda bottle! Works perfectly! I have a few! But any bottle with a cork or tight seal works. People give us Their pretty tequila bottles and I use those as well.

    That is a wonderful idea! I love using infused oils but have never made any myself. That's crazy easy, and would save a ton of money. Everything is better with garlic!

    I love Calphalon too. I had a HUGE one that was just too heavy for me (I'm old - lol) so I donated it. I have one your size now.

      @@DianeTheCanningNana True. AND I mostly used mine for making spaghetti sauce (gravy) and with Calphalon, it said to not leave anything tomato based sit in it overnight. I always make my sauce the day before as I think it tastes better the next day, so that was a pain in the butt too, to have to take it from the heavy Calphalon pot and put into another pot. So I just donated it. It was an EXPENSIVE pot too, like $148 back 30 years ago.

    The garlic and basil infused oil looks great! Since it was made with fresh rather than dried basil and garlic, I would make it in small quantities, store it in the freezer, and use it up within a few days after it has thawed :-)

      🗝🤗 Fresh is Best for full flavor. No need to freeze it. It is shelf/Counter stable. No Garlic Or Basil is left in the olive oil. You can leave fresh herbs in the bottle for a couple of months before removing, but not garlic. Dried herbs do not give off their own oils , so the flavor is much less.

      The sediment is due to using MY Fresh minced Garlic, and can occur from some Olive oils as well , which is kept refrigerated. All of my other Infused oils are clear.
      You do not want to use dried herbs for infused Olive oil. You will not get the same infused flavor that you do using Fresh herbs.
      When I use whole, Fresh cloves of Garlic, or Fresh herbs alone, the infused oil is always crystal clear.

    You can use coffee filters too to strain that. Works great (I've heard).

      No, you want to strain it so that all of the small particles are out and it is Crystal clear ( except for the natural oil color) small particles left in will settle to the bottom. Straining very well is the Key to having a Safe oil.

    My family LOVES infused olive oils. Garlic, rosemary, lemons and citrus. Do you have a video on infusing with lemon or ?? I didn't realize how easy it was to do it at home. I love making gifts for friends and family that they can use. It is so expensive to buy good quality infused oils. Have you done balsamic vinegars yet? Love fruit based infused ones.

      🗝🤗💜 I use the oil for sautéing vegetables, in pasta, pasta salads, Caprese Salad, really anything I want a clean, subtle hint of the flavors added.

      🗝🤗 I store mine in either olive oil or water in my Refrigerator. I have kept some in a Jar over a year, but honestly , it doesn't last long here. We use Garlic nearly every day!

    I just started looking into infused olive oils. First thing I read and see in the videos is BEWARE!!! Possible botulism!!! So now I see you doing this and I would guess it is safe because there isn't any organic material in the oil?? Thanks for a great tutorial!

      It will keep indefinitely in your refrigerator. I pour out what I will be using and let come to room temp is some dishes, others I use from fridge

    I cannot find a University or USDA site that specifically gives a safe recipe for infused oils that are shelf stable in the refrigerator for more than four days.
    Will you please link your recipe site. I think these would be delicious and much cheaper than commercially purchased ones.

      I don't have an online recipe site. I have been infusing my olive oils for 35 years. I don't know of a " recipe" site for it, but I do see other sites that teach the exact same way I have been doing it.
      This isn't Canning, so will not be on the USDA site for Canning.

      🗝🤗 I use it quite often! Sautéed Veggies, Stir Frys , in pasta salads, in Pasta dishes. Anything where you would like to add a robust, yet Light flavor of Garlic, or any herb infused oil.

    Was that minced jarred garlic you added from the grocery store? Or did you make it yourself? I know the minced garlic in grocery stores has some additives to it that to me do not taste very good.

    what do you consider a warm temp for the oil? 110o - 120o or what? and how much of the herbs do you generally use. i'm one of those people that likes measurements

      Temp about 130° , not boiling. For the herbs, it's really up to You how much flavor You want in your infused oil. Some herbs are stronger than others. Basil is pretty strong so I used about 3/4-1 cup loosely, and about 3 Tablespoons of My garlic. When using garlic cloves you use more. Here I used 3 cups of oil.

      🗝🤗 It will last over a year, however, because I did not use Fresh cloves and used my own minced garlic , I am keeping This bottle in my refrigerator. All of my other bottles are kept safely on my counter

    I thought herbs need to soak in citric acid as not to risk botchalism

      You may soak them for 10 minutes in Citruc acid. I grow mine or buy organic from local farms and wash thoroughly before using. Make sure to rinse after using Citric Acid. A few herbs keep the flavor of the CA and it tends to taste a bit " off". I do Not leave my herbs in the oil after bottling. I strain first. Oils keep longer and the flavor is very fresh.

    Garlic is a necessary ingredient, and there is no such thing as too much. IMO
