What’s a substitute for the Lotus Crunchies? I haven’t been able to find them. Lotus offers a coconut crunchies product but I don’t want coconut flavor.
Yummy! One thing I’m lost on is how can someone keep the cookie from getting stale/soft between finishing the cake and then delivering the next day? I wish I knew how to keep the cookies “fresh crunch”

Hello, looks yummy....just wanted to know do you serve and eat them that way with the acetate still on, or do you remove the wrap? I make my mini's just like yours, but I line my molds with the acetate, and then assemble the cakes, and after chilling I remove the cake mold, then the acetate, they always come out so neat, and pretty, thanks for sharing.
Thank you!! Yes I serve them with the acetate on and I put my logo sticker on the front. I tell them they can unwrap and slice or just dig in! I love the idea of wrapping and chilling and removing. It always looks so clean!

Does the acetate keep them from drying out?
I haven’t specifically paid attention but so far I have not experienced dryness or received any feedback about it. But I would assume it will definitely be better than leaving unwrapped.
