Apologies for the length! But you brought tears to my eyes, literally, so I couldn't help it. First of all, I haven't seen what I grew up calling shorgham turshu in at least 40 years... My father waited all year for the season to come to make it, and then for it to ferment. We ate the pieces with either yogurt or sour cream, but all he cared about was the drink.
And then the michov kufte--wow. Someone really, really knows what they're doing to make the outer part that thin. I can remember my father talking about how women would make that for him and his family when there was a potential marriage in the air.
I'm still nowhere near good enough to make the kufte like the ones you showed; I make sini kufte instead. And now, my very Danish partner, whom I kidnapped from DK when he was 33, makes a beautiful sini kufte, as well as many other Armenian dishes, and he is a baker, so I'm totally spoiled with two very different and gorgeous baking traditions.
Thank you so much for all those beautiful memories -- I'll be smiling all day.

I have been saying the same thing since I was lucky enough to visit there when I was a teenager in 1987! Been 16 times all told. Cannot get enough. Love taking my high school students there. They are always surprised. Getting them köfte or gözleme late at night from some street vendor in some random part of town on our way back from all day expliring town is sg very special.

I'm so happy that u finally brought your viewers to a restaurant! Turkey's food standard is high , things are very clean and portions are very generous. Vegetarians will have no problem because Turkish cuisine is very flexible to accommodate vegetarians. Next time u need to bring us to pazar! Turkey has the best tomatoes !! I'm going Türkiye soon again , mutluyum !

I ate peymacun when I lived in Istanbul (I’m pescatarian), I’d get it at a place on Mühürdar Caddesi a lot cause I lived in Moda, it was on my way home from the ferry. Maybe Bahar just misses the real thing, now that I can get soy meat easily, I make it at home with that instead of with beyaz peynir, just cause I prefer it. 🤷🏻‍♀️
