Yeah convergent evolution is a lot more common in the real world than people realize too. While the Mutos are insect-like they have teeth, internal skeletons, and limb-derived wings rather than segmented wings; all pretty betraying of what makes a bug a bug. Hoping Legendary leans more into them being unique lineages rather than going the "evolutionary mutation" route.

The Shinomura would most likely have descended from a cyphonaphore, which are organisms made of multiple organisms called polyps. I believe this is likely due to the Shinomura being a swarm species, and it probably wouldn't have descended from an echinoderm like a sea star.
Something to note about the mutos, they have a skeleton. Teeth, skeletal structure,all that jazz. We can see a spinal column in g2014 after Godzilla severs her head. And the way the male muto's wings fold look more like arm derived wings ,like bats,birds,and pterosaurs.

I would say both Godzilla and Doug's species are part of a group of reptiles called archosaurs and crocodylmorphs (relatives of crocodylians) due to their resemblance, design and characteristics. And it is quite possible that behemoth species evolved from the chalicotheres since they both share a ressemblence. And think their species origins would be revealed in a new MV prequel series that explains how they became the titans we know if legendary does plan on creating a series about them.

I think that most, if not all, of the Titans originated from the Hollow Earth separately from the rest of life on Earth. I find it likely that they are all more closely related to each other than to any other branches of normal animals. Any similarities to normal creatures would be convergent evolution. I image that they all came from a unique type of life that developed down in the Hollow Earth, where the main energy source is radiation as opposed to sunlight. Evolution does the rest. They split into their own groups from there. But I'd say that Godzilla is much more closely related to the Mutos than Godzilla is related to dinosaurs or even reptiles. Same thing with Kong. My best explanation is they have spines (You see the Female’s spine after the Kiss of Death) and full bone structures. If you look at their mouths they have canines and similar teeth to early synapids, among other small characteristics that are easily missed. They might be an offshoot of one of the first mammals or split at the exact time mammals diverged from a common ancestor with them from the mammal tree. They also have toes with nails rather then claws. There isn’t a debate on the mammal thing given Gareth himself said he based them on and intended them to be mammals or something closely related. They don’t have an exoskeleton, it’s actual skin but really hard skin. Also you can see an artery spray when she gets decapitated. The arms are fingers, if you watch how they move they seem to be connected at the shoulder, exactly where a wrist-shoulder joint would rotate. A lot of traits they have exist in various animals but combined makes them more supernatural. Given the traits are similar to the Rock Critters in GVK which are also Vertebrates (They got bones, jaws, spines, nails and similar musculature to primates as well according to the VFX crew. They might actually be from the same family tree as the MUTO’s). The MUTO and the Rock Critters are likely what happens when a mammal needs to adapt to the Hollow Earth. Honestly I think the Jinshin (MUTO) and RCs are from the same lineage of distant mammal-like reptile or a proto-mammal that evolved and adapted to the HE and living in deep caverns within the planet. The arms are fingers, if you watch how they move they seem to be connected at the shoulder, exactly where a wrist-shoulder joint would rotate.
A lot of traits they have exist in various animals but combined makes them more supernatural.
Given the traits are similar to the Rock Critters in GVK which are also Vertebrates (They got bones, jaws, spines, nails and similar musculature to primates as well according to the VFX crew. They might actually be from the same family tree as the MUTO’s).
The MUTO and the Rock Critters are likely what happens when a mammal needs to adapt to the Hollow Earth.
Honestly I think the Jinshin (MUTO) and RCs are from the same lineage of distant mammal-like reptile or a proto-mammal that evolved and adapted to the HE and living in deep caverns within the planet. The Jinshin are very adapted for living underground.
Both even have ovipositor like structures (Hinted at for the Jinshin, seen on the RCs).
Also we gotta consider the fact Jinshin can molt into a prime which the process is compared to a silverback gorilla.

Titanus Gojira may have actually evolved from dimetrodon specifically. If you gave a dimetrodon a gojiras dorsal plates and made it bipedal, it looks extremely similar to Titanus Gojira.
