Shelly 2EM can measure with two clamps on the same phase. (same hot wire L) In the US, Shelly 2EM is also suitable for split phase 180° when a clamp is reversed. But Shelly 2EM cannot measure three-phase current with 120°, then it can only measure one phase. Shelly 2EM distinguishes between power consumption and feeding power into the gird.
Great video! I have setup my Shelly EM but when I try to add it to the energy dashboard the entity does now show? It shows all the different entities including total energy produced but not the energy it's producing at that time. Any ideas what I could be? If I want to add a simple chart for example I can use the current energy production entity without any issues, just not in the home assistant energy dashboard Thanks!

No, you can use either phase or neutral, but have in mind that you may need to rotate clamp if you are getting negative values.
