    Thank you so much for posting this recipe. My relative brought a kabocha squash home and I had no idea what to do with it, so making a pie was a great idea. I have a few tips and some feedback both for you and for anyone who wants to attempt this recipe:
    -First off, the amount of sugar you suggested was PERFECT. So many American recipes tell you to overdo on the sugar and I like that you kept it minimal.
    - I made a 9 inch pie with a pre-baked crust that shrunk a little. If anyone's crust shrinks before you can bake the entire pie with filling - my suggestion, just reduce some of the ingredients while keeping the other amounts the same and the pie will still turn out great. Where it calls for an egg yolk and two whole eggs, simply just whisk 2 whole eggs into the mixture. Forget the extra yolk. Where it calls for 3/4 cup and a few teaspoons of heavy whipping cream, just put in the 3/4 cup. With these adjustments, I wasn't stuck with extra filling because of my smaller crust. I'm not a baker or pie expert, but the pie tasted fine to me.
    -I would recommend trying to pre-bake your crust for an extra crispy, flaky pie. Try the recipe from Four and Twenty Blackbirds bakery (can be found online).
    -If you don't have pumpkin spice, or all FIVE spices you need to make pumpkin spice (nutmeg, cinnamon, ginger, cloves, allspice), simply put in two teaspoons of cinnamon, and 2 teaspoons of nutmeg if you have those two. The resulting pie had a nice kick and a great pumpkin flavor.
    Otherwise this is a great recipe and I appreciate the post. Working with a kabocha squash is much easier than trying to buy and carve an entire pumpkin. Thank you!

    Thank you so much for this lovely recipe! I've only made soup from the kabocha squash; there is a K squash waiting on my counter to be eaten. I can't wait to try this!
    Have you ever tried an Italian squash called. "Marina di Chioggia"? It's the ugliest squash I have ever seen and always thought it was an ornamental, but we tried it and it is SO delicious! If you like kabocha, you will LOVE Marina di Chioggia squash.

      Optional - I don't need it, but it gives slight sweetness and cold refreshing feeling. The whipped cream is not too sweet. :)

    I am not fond of squash like butternut, and sometimes pumpkin can be a little too similar, but I do like Kabocha in tempura, so this pie might be one to try. Does the texture end up more like squash? Would it be worthwhile to push the puree through a sieve to remove any stringy bits?
    This holiday I will be making a wholly unhealthy (but super delicious) Bourbon Chocolate Walnut Pie for dessert.

      Ohhhhhhh I'd love to try your pie! Sounds AMAZING! In my blog post, I also showed how to push the kabocha through a sieve. I've tried both method and I actually like the food processor texture (more smooth). www.justonecookbook.com/kabocha-squash-pie/ I always thought hand-push gives more finer texture, but it's actually opposite. :D

    Hi Nami! I live in Japan (Kumamoto) and I was wondering if they have any pie crust or if I have to make it myself? I've never seen it in a Japanese grocery store. :-(

      There is pie sheet (puff pastry sheet) but I've never seen a pie shell before. Probably you'll need to go to an international supermarket.       Sure! Just swap the heavy cream with milk (same amount). It'll be lighter version. :)

The sweetness from the squash is enough ! Plz make more healthy recipes! And Wholefood carries this pie crust, I went to traders Joe but they don't have it.     my mom is making a cake she calls a mexican fruit cake. it has fresh pine apple in it and coconut, its liek a carrot cake recipe with out the carrots, then it has a cream cheese icing with coconut in it

      You'll need to adjust the amount of sweetness. Kabocha is sweeter than butternut squash in my opinion. :)

      Let me think... well we have meat pie (ground meat) or chicken pie with creamy sauce, etc... but all these dishes are not traditional Japanese dishes and all came from oversea (but turned to a bit more Japanized?).

      Mr. JOC has been working on the color correction and filter...but he's not quite there yet. I'll work on the edit next time and hopefully it'll be better. The beginning and ending shots are always under natural light and it's so pretty (naturally!)...filming under indoor lights (in the kitchen) has been very difficult. :( Thanks for the feedback! :)

      フィードバック、ありがとうございます。Mr.JOCはいつもカラーコレクションには苦労してるそうです。TH-camにある編集で変更できるかやってみたのですが、全体の色が変わってしまうので、無理でした。やっぱりPremierできっちり編集しておかないとダメですね。次回は一緒に編集してみます。最初と最後のかぼちゃのシーンは自然光なのですが、やっぱり色が自然だし、全然違いますね。インドアの照明設定・編集は難しいです・・・。ありがとうございました!
