Safety from what? Everyone can work as safe as they feel they need to work. If that means you want a guard ( still can’t figure out where ) then use them

I believe you cut your bowties on the wrong orientation the grain should be with the long grain across the gaps. Nice looking piece of work.

What router bit you use ?
When using the template I use a mortising bit with a bearing usually 1/2 inch depth and 1/4 inch shank
